Sweet Potato Pudding

INGREDIENTS:
⭐️For the blending step:
2 1/2 lbs Jamaican Sweet Potatoes (weighed AFTER PEELING)
1 lb Yellow Yam (weighed after peeling)
2 small cocos(eddoes)
4 cups coconut milk (Homemade is great but I used Kosa canned coconut milk this time)
1/2 - 1 cup water (also used in the blending)
------------------------
⭐️Liquids added to blended mixture:
White rum 2 tbsps
Red label wine 1 tbsp
Vanilla 2 1/2 tbsps
2 - 3 cups Brown Sugar
2 tbsps lemon juice
------------------------------
⭐️Dry Ingredients:
Aprox 1 1/2 - 2 cups Allpurpose Flour
1 cup fine cornmeal
2 tsps Salt
1 1/2 tsp freshly grated nutmeg
1 1/2 tsp cinnamon
Pinch of ground cloves (optional)
Pinch of allspice
------------------
1 1/2 tbsp Melted Butter
1 - 2 cups raisins dusted with all purpose flour (You may soak the raisins in alcohol as well 😉)
----------------------
⭐️Soft top:
1 ½ cups coconut milk or whole milk
5 Tbsps dark brown sugar
Salt as desired
½ tsp cinnamon
Pinch of nutmeg
1 tsp Vanilla (optional) ⬇️⬇️
RECIPE INFO:
1. Make sure the yam is good quality...not bitter...nice and dry 😁 it can ruin the pudding if it's not good.
2. You could use two 8 inch cake tins or two 9 inch cake tins. For smaller tins, the pudding will be a bit taller. I used an 8 inch and a 9 inch.
3. Concerned about aluminum foil use? Try placing a baking tray - hot water bath on the shelf below the puddings while they bake to help with moisture
4. The more flour used, the more dense the pudding will be. More flour added, takes away from flavour so don't add too much.
5. The pudding is usually ready under 2 hrs because this is a small batch.

    I disagree if it’s really authentic instead of the coconut milk powder she could use the original coconut in the shell😌 but I did try this method n it came out really good and tasty

    @@JerenesEats so I made it but unfortunately I think I had too little flour and it is too soft. Can be eaten but lesson learned. This is like my 3rd time and wanted more moist but not this moist lol. Will share pics next time.

    You process proves no two Jamaican cooks the same. When I make it I use some of the same ingredients as you but a total difference method. The custard for e.g. the liquid is what I used to blend the potatoes. I’ve never thought about heating it up. But yours is bomb 💣👍😁😋. I’m gonna try it that way. I also followed your recipe for the Christmas cake and it wasn’t a disappointment.

    Yes! Definitely! Sometimes I mix the milk with the flavorings/spices then add it to the potato. 🖤💚💛

    Jerene, you're KILLING me here!! I so feel for some potato pudding, but not sure I can resist the urge to make it when you make it seem SOOOOO bloody easy. I guess my "summer body" will be delayed...YOLO. To boot, I brought up a "Jamaican style grater", when I came back from JA just over a week ago, for this very reason. I LOVE the soft portion on top...😋😋😋. My granny calls it, "Splabadash". Be careful with the use of foil, when cooking. Studies have revealed it's linked to dementia.

    This has to be made with Jamaican sweet potato. For binding use coco, dasheen, more sweet potato and flour

    Hi there I love potato pudding, thanks so much for sharing your style with us🤗. I was wondering after taking pudding out of oven, how long should I wait to move the pudding out of the baking pan? Once I move it after 3 hours, still little warm and it all fall apart, after baking it wrapped up with foil paper, I was so sad believe because I didn't greater it I added too much liquid, I'm sure that added to my pudding falling apart when trying to plate it on the table.

    It's the J Wray and nephew Red label wine you may find in Caribbean stores. It is a Jamaican product. You may use a port wine
