About Pai:
Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the KZread channel Pailin's Kitchen.
Pai was born and raised in southern Thailand where she spent much of her "playtime" in the kitchen. She traveled to Canada to study Nutritional Sciences at the University of British Columbia, and was later trained as a chef at Le Cordon Bleu culinary school in San Francisco.
After working in both Western and Thai professional kitchens, she decided that her passion really lies in educating and empowering others to cook at home via KZread videos, her cookbook, and cooking classes. Can the sauce be used on chicken wings? Substituting fish sauce with chicken broth?

You could most certainly make the sauce in advanced - keep it in the fridge for up to a week and add cilantro leaves when you reheat it. You could try freezing it and let me know how it turns out!

Hi there ! Ginger is actually very different from galangal, so if you substitute it the results will be different. You could still try it and see how it turns out for you. You can use dried lemongrass, for sure, but you will need to use more of it than the recipe calls for. Hope this helps! :)

Perhaps they will have it, but I don't remember seeing it there. I personally never found it in SF, I bought mine frozen from LA when I lived in SF!

Halibut is a good grilling fish. I love it.
I haven't personally seen it used in other cuisines, although that doesn't mean it's a strictly Thai thing. But I've only been able to find it in specifically Thai grocery stores.
this is a #2 Malaysian favourite food of Thai dish. We call it Tiga Rasa = three flavours. Now I know how to make it. Thanks a lot.

Hi Pailin, i love your cooking shows, you have shown how easy we can cook Thai food at home in our own kitchen. Thank you from the bottom of my heart your sharing your knowledge and heritage. I tried this recipe today the sauce was fantastic but i used snaper and the fish was disintegrated. I am from Sydney, Australia. Could you please suggest a suitable fish that I can use. we do not have Halibut here but we do have flounder which also a bottom dwellers but it's a much small fish then Halibut.

If Cilantro root is not available you can substitute Cilantro stems better than nothing
A great looking recipe and another very enjoyable video. My first introduction to halibut was a few years ago while on a trip to Alaska. We had all our catch shipped back home and had many great meals from it. Off topic question, but did I hear a baby crying in the background a couple of times during this video? At first I thought I was hearing things while watching the video.

I was recently in Bangkok and had the pleasure of taking colleagues to one of the Somboon chain of seafood restaurants and all six of us spoke up for a second round of this delicious fish preparation when they came to ask about dessert orders. The poor waitress was so confused but when I told her the fish was "wan mak". She laughed with us and ran off to get our second order. (We still ended up with mango & sticky rice.)

davcnslt You talking about a delicious fish preparation, Microwave fish is delicious? you got an Idea of what is food? So scary to go eat in a real Thai restaurant? 'wan mak' WTF is meaning in Thai? do you even know something about Thai culture? so sick.
Even a lot of Chinese use it this way. You buy the whole herb. Leaves,stem and roots like it grows. Perhaps you can let it grow in a pot in the window ?
There are so many different ways to make pla rad prik and some are more spicier then others. Ive also seen this done with cat fish pieces but not sure if thats the traditional fish to use.

Thank you for sharing this recipe. I love the way you go into detail in explaining certain things. You are very articulate. And you are quite a doll!!! I had the pleasure of having been invited by the cooking staff of the Bhodi Tree restaurant in NYC to eat with them. What a treat. I love the humble Land-of a-million-smiles hospitality. I shared a motorcycle garage with a friend from Thailand whose girlfriend worked there. I was always treated like a king. :-)

Our Asian market here in Maryland has Cilantro Root - very expensive considering what it is. Next year I am going to have to grow a garden. I wonder if I can prepare the sauce without adding cilantro leaves of course and keep it in the fridge - wonder how long it would keep? Perhaps vacuum pack small batches and freeze it.. Looks like a versatile sauce - I bet it would be great over nice pan roasted chicken breasts as well in lieu of fish when you cant get good quality.
I learn something new today about HALIBUT fish. It might not be available in Australia but at this point of time, I have got BASA fillet available at home. Can I cook that and get similar result??? Pls do advise, waiting for your reply. Thanks
Prik means chili in thai, and 'prik' means sting in dutch, somehow that makes sense lol

You can try brown sugar and lime or lemon juice instead (but don't cook the lime/lemon juice, just add it at the end).

dear pailins,im a lil bit confused actually.i used to watched my mom's version of pla rad preek.she usually didnt cook the sauce.she only pound together some garlic,cilantro roots (rad pak chee), palm sugar,thai chillies,lime sauce and fish sauce (nampla). she fried the fish and just pour over the pounded sauce all over the fish...so,my question is, is it the same dish with yours? thank you~~^_^

+Wan Siti shazzelyn Aida Wan Sharifudin No, that's not a "rad prik" one which have to be cooked the sauce as in her cooking VDO. For your dish, in Thailand, we called "rad num pla" or may be "yum".
I went to my oriental market asking for cilantro roots...impossible to find here in sweden. They havent even heard about it, maybe this is a strictly Thai thing? beacuse they people that work there are from china singapore and japan, but they stock items from all of asia.
