Bara is the "vada" of Indian cuisine. It has a hindostani background, same with roti. Pom has portugese-jewish roots, saoto, or soto is also found in Indonesian cuisine.

Great review. Some additional information about the food though: 1. 2:58 - the bara is an Indo-Surinamese/Indo-Caribbean bready donut. That "curry" flavor you're tasting is what we call oerdi. It's a type of flour made from a pea that gives it the distinct flavor. If you really want to see the flavor of a bara come to life, add some chutney in the middle and try it. The best chutneys are mango chutney and bilimbi chutney. Though potato chutney is a good option too. It should be a Surinamese chutney. 2. 3:44 - if you loved Dutch bottled Fernandes Soda, you will love Surinamese bottled Fernandes Soda even more. Dutch bottled Fernandes is also found in Suriname in some stores, but it doesn't compare to the Surinamese bottled one. They say water quality plays a role, as Suriname has better water quality. Surinamese Coca Cola is also a must try. And in Suriname the go-to drink that pairs well with roti is a Surinamese bottled Coca cola. Also, Fernandes in Suriname is a big company, they have more than sodas. In Suriname they're actually known a tad bit more for their bread and baked goods. Their ice-cream is heavenly. Many who try it are surprised by the flavors. They're also in the automotive sales industry and some other stuff. 3. 4:18 - the saoto soup will come even more to life if the spicy soy sauce and sambal - which you had on the bakkeljauw - is added to it. In Suriname we also add tiny fried potato and rice vermicelli sticks. Gives it a crunchy punch. 4. 6:18 - the teloh can also be served with green beans or long beans. In Suriname it's commonly served as such. We also eat it mostly with trie or in English fried anchovies sambal. Furthermore, in the past 10 years teloh has evolved a bit in Suriname. Chicken is now also added as a side. This is strange for Surinamese Dutch people, because when they left this wasn't how the recipe was made, but now that's almost standard on every teloh in Suriname. 5. 7:35 - pom is made with pom tayer. Tayer is Dutch for taro. So, pom tayer is a type of South American taro. It is indeed a casserole and finds its origin in Portugese Jewish Surinamese cuisine that over time changed and was adjusted by the enslaved Africans. 6. 9:15 - the broodjes you had are also found in Suriname. Tempeh is also found in Javanese Surinamese cuisine and also served on broodjes in Suriname. The peper steak is mostly made with chicken instead of steak in Suriname. The dynamite is a combo of two dishes that sometimes are found in Chinese Surinamese broodjes spots. EDIT: 7. 5:09 - Surinamese roti falls under the category of Caribbean Roti. Caribbean roti is found in Guyana and Trinidad. Some are similar to rotis found in India and other unique to the region. There are 4 main varieties of Caribbean roti. The differences lie in the filling of the flatbread. In Suriname you can sometimes order a specific type at some spots, or some even ask which one you want. There are: Aloo roti (potato roti), dhalpuri roti (yellow split pea roti), sada roti (plain flour roti), paratha roti (like a dhalpuri but they break it a bit by clapping it). Hope this information provided some more context and once again a great food review!

We eat roti differently. The roti is separate and we break it of in bits and scoop the veggies and meat. So a roll is definitely Dutchified. But that's okay if that means it's more accessible for people.

All roti places here in Leiden serve the potato, veg, meat and egg in a tub with the roti plaat separately. If you want it rolled up like they had you have to ask for it. Rolled up is not on the menu at the place we go to though.

You can buy roti rolls but they are a seperate item on the menu. If you just order roti you do get the bread seperately and usually there is so much filling that you wont be able to roll it up if you tried. I like to put everything on the roti and then cut it with a fork and knife, I know thats not how you are "supposed" to eat it, but I like it that way.

I love surinam food. I've lived in Rotterdam for 10 years. Now I live in the north of NL, and there isn't a surinam food restaurant around... The surinam sandwitches were my guilty pleasure. Broodje bakkeljauw, broodje zout vlees, broodje steak....yummi. I also like the surinam hot sauce, as it revolves around the madame jeanette pepper which is way more spicy than normal peppers. I like extremely hot food, so for me pure freshly ground mme jeanette peppers are a must. The fusion cuisine together with quite unique vegetables like pom and kouseband etc makes it very nice.

Hope this was spicy enough for you. Surinam kitchen and peppers are very well known for their spiciness. As a native white Dutchman married to a Surinam girl/wife this is a weekly routine for me. Most people really love Surinam cuisine. My opinion, it is nice but cannot rise to the heights of REAL Indonesian or Thai food which again in my opinion is much more refined. I can back this up by telling that in Surinam their is a large community of people originating from Java Indonesia. If you go to the island of Java Indonesia cuisine is like heaven. Very refined. So I went to a Java restaurant in Surinam on the other side of the world expecting real nice food. It turned out to be a pale imitation. Thinking this was due to the restaurant I tried a second one. The result was the same.

That's because many places in Suriname have exchanged good flavor for bland flavors. Surinamese in Suriname complain about this too, but offering the refined taste is expensive and because of the bad economy not many people can afford it. So to keep stuff cheap, many places had to do with less. There is a restaurant that offers refined flavors, but they're expensive. It was their goal to offer that refined taste, but it also shows in the price. It's called Restoran Bibit. You see people of the upper middle class and up dining there...the common man doesn't dine there so often because of how pricey it is. The same goes for roti. Interestingly, the same people do cook better when they're at home. Homemade Javanese and Indian food or even Creole food tastes better than what you get on the street.

The first time I ate tempeh I hated it. My mother made it and I don't know what she did to it but it wasn't good. Years later I made gado gado and the recipe included some shallow fried tempeh, so I thought I would give it a go since the gado gado sauce is so flavorful it could cover up sub par flavors. During the cooking process I took a good look at the raw tempeh, smelled it, tasted it raw, then sliced it into slices and cooked it until nice and brown. I wouldn't say it's funky to me, but it has a slightly sour fermented flavor in its raw state. But it's also really nutty when cooked well and that was really addictive. I can say I love tempeh now.

The Dutch word for cod (fish) is kabbeljauw. The Surinamese is bakkeljauw, but Portugese is bacalhau and Spanish is bacalao. Effectively the Surinamese bakkeljauw is the same as Portugese/Spanish but written in Dutch spelling. Why the Dutch adopted the Portugese/Spanish name but then flipped "k" and "b" and the English didn't at all I never grasped. Cod is a native fish in the North Sea and it is available and eaten also at fish stands as "Kibbeling" (fried cod).

Googled a bit and the surinamese kitchen is a blend of cultures. The more you look into food cultures, you will find there's influences from other cultures and we all mix and match and we've been doing this for centuries. And spices and herbs are really interesting too. Curry is a blend of different spices. And who knows who invented it, please step forwards. Used in the region of India, Japan, China, Suriname, afrika and in europe in the netherlands you can buy small packs of 80 grams in all my local supermarkets for like 0,59 euro that say surinami masala(kerrie) and you can sprinkle some on when you are frying potato slices and it tastes awesome. I'm not really familiar with all food culture and I'm focussing on italian, french and asian atm. Still learning but it seems obvious they are all influenced by each other in some way. Very interesting. Cool video.

I'm Indonesian/Dutch but the toko I always go to to buy Indonesian food also has a lot of Surinamese food and it's so so good! I feel like a lot of people here feel this way but other cuisines just have way better food than the Netherlands, which is probably why it's so popular, even among fully Dutch people. But I feel like these cuisines have just become a part of Dutch culture at this point and I'm really happy about that. Maybe you could do Turkish food next? That's also a very popular cuisine here and it's so good too! I always go to a Turkish supermarket near me and they also sell freshly made food, I always go there for Lahmacun, Börek, turkish bread and Baklava (if I'm not dieting 😅). Köfte, falafel and kebab are also really delicious, I'd really recommend trying all of these!

If you want good sambal get the sambal made with Madame Jeanette peppers. Those are yellow peppers and have a very distinctive smell and taste. They are also hot of course. Madame Jeanette peppers are originally from Suriname so that's what you really want. Look for yellow sambal :D. You can wake me up in the middle of the night for a sandwich with grilled crispy bacon or char siu with a good amount of sambal made from Madame Jeanette.

the fried casava looks very similar to yuca in Central America (which is also fried casava). Have you had yuca before? How close are they to one another? I found yuca to be a bit too ?woody? for me with the tough strings inside. The flavor was almost the same as potato fries though

My bf is half Indonesian and I had to show him the saoto soup (which in Indonesian is Soto) and how you guys ate it hahaha! When I first ate Soto I added just a little bit of rice and a lot of Soto and my bf was hating on me how it wasn't soup. He shaked his head very hard when he saw the fragment ahaha! No hate obviously, since you guys have no idea how to eat it. But soto is more a rice dish then it is a soup. How my bf eats it is: he adds rice on a deep plate, adds some soto (mainly chicken and just a bit of the broth) and then some sambal, an egg, fried onions, bean sprouts and sometimes they add pieces of boiled potato aswel. And I agree, Soto is soul food. Whenever you feel sad, sick or meh: soto heals your soul!

The charm of the Surinamese cuisine is the melting pot of influences. The wicked Dutchies brought during the slavery ages so many ethnical groups together in Suriname that now the people themselves are a colourful mix of colors , cultures, religions and FOOD ! What was missing? kouseband (the long green stringbeans), Pindasoup, Surinamese beefstew... It depends if the Surinamese people in your shop are Chinese, Indonesian, Hindustan or Creoles.

That sauto is very striking similar with Indonesian soto ayam, and fun fact telo is Javanese for cassava. Yes many Javanese people migrated to Suriname as slave, back in the days when Indonesia colonized by the Dutch.

BTW .. just eat a normal roti (chicken lamb or beef) .. not a roti roll.... roti roll is more like a broodje... normal roti you eat from a plate... originally roti pancake underneath and the meat and veggies on top and you would eat it with your hands without cutlery.

Roti roll is not totally the real deal imo, you'll miss the sauce which is served with the chicken when you order a normal roti meal. You grab a piece of roti, put some chicken/potato/veggies in it, wrap it and then dip it in the sauce. Way better than the roti roll.
