That final position. Is that a hold down, or a choke?

Great question. it is a hold down!! You can put pressure on the head from that position to make it uncomfortable for your opponent, but there's no real pressure on the neck.
@5:12 If looks could kill.... obviously uncomfortable for Uke!

Yeah, this one is (or if done correctly, should be) a rough one for your uke (opponent)!
