I agree. Saliva chicken is a gross name for a dish, especially when this dish contains absolutely zero saliva. Saliva chicken, probably should be known as mouthwatering chicken, is a direct translation from its Chinese name 口水鸡. I guess it means that when you look at them, your saliva will mysteriously start to well up in your mouth. LOL. I didn't use to like this dish at all because it looks so oily but when I first tried it in the US (haha out of all countries, right) when Roland and I were vacationing in the US, I fell in love with this dish instantly. Now I understand why many people love this dish. I hope you give it a try too.

Ingredients:
Serves 4 - 6 pax
Cook chicken first with the ingredients below. Once cooked, remove chicken from heat & submerge chicken in ice-water. Reserve 1/4 cup of the chicken stock)

A pot of water
3 stalks of spring onion
4 slices of ginger
1 piece of star anise
1 teaspoon of salt
2 pieces of boneless chicken thigh
Chilli oil ingredients
------
1/3 cup of cooking oil
10 pieces of dried chilli - rehydrated & deseeded
1 tablespoon of Sichuan peppercorns
1 tablespoon of chilli powder
Other ingredients
--------
4 cloves of chopped garlic
10g of minced ginger
3 pieces of minced bird's eye chilli
1/2 teaspoon of sugar
1/2 teaspoon of salt
2 tablespoons of light soy sauce
1 tablespoon of sesame oil
1 stalk of chopped Chinese parsley
1/4 cup of chicken stock
2 teaspoons of black vinegar
1 tablespoon of Chinese spicy hot sauce
Some chopped peanuts
Some white sesame seed

    Ok I made it. Without the Chinese hot sauce. BUT..it’s the most authentic tasting saliva chicken I’ve ever cooked so far!! I’ve been following another recipe for awhile but this one definitely is a keeper. Thank you so much!

    Really love your videos. Not much south east asians share their recipes on KZread and it's really helpful for me as a young adult to collect some recipes and try on my family. It's really okay to have some mistakes on the measurements of the ingredients as long as you clarify it. Your enthusiasm for food is something that it's really interesting to see through yoyr videos. I hope you will have a non spicy version as well for small kids, or maybe i can just exclude the chilli oil and garlic.

    Thank you sooo much, Sharalyn for your kind words. Your family is so lucky to have you! To make this dish suitable for young kids, I think you can just use the sauce we added at the end. Although the name of the sauce is spicy sauce, it’s not really spicy actually. Another way is to use our ginger chicken recipe instead but don’t add old ginger in the ginger mix.     Hey can you do a fish ball noodle soup recipe ? I had it before in Singapore the dry version with the fish ball on the side try to recreate it at home but didn’t turn out well :/ couldn’t find a good recipe online either

    Loved the recipe but these ingredients ( Sichuan peppercorns and the Chinese spicy sauce) aren't available here 😢. Any substitutes?

    Hi Joyce. We got it from Yuehwa but I thjnk Shengsiong sells them too. If you can’t find it, you can look for spicy broad bean paste under AAA brand from NTUC. Happy cooking!

    Hi Alexandra. We suspect it’s the same so if you can’t get hold of Xiang la Jiang, you can use spicy doubanjiang. Please use the Chinese version. Not the Korean ones. Happy cooking!

    It's also known as Chinkiang vinegar or Zhenjiang vinegar, you can get it from an Asian supermarket or even Amazon.

Do you stay in the US? If yes, you can get it from amazon too amzn.to/2WnlZDp If you really can’t get, red chilli will be fine too but dried chilli is preferred. Hope this helps.
