Top tip! If you wanna make these extra special, half the batch and put it in two separate trays, then you put jam (usually raspberry jam but you can use strawberry or another kind of berry jam), between the two halves before covering them in icing and coconut. This is how my family does it (yes I am Aussie) and I think it just adds that extra something :)

Exactly But the secret jam is RASPLUMANDAPPLE A combination of Raspberry - Plum and Apple It's a Pastry Chefs secret Don't tell anyone
I LOVE lamingtons! My Pa used to call them dandruff cakes 😂 He and my Nan would have a little production line when they made them. And they always made them “plain”, like these. An easy level up for a dessert or special occasion is to fill them with jam and cream 😊
I saw these made when I was little and for years I have struggled finding the recipe. When I did find it, I have started making them every Christmas. The only difference is I coat them in crushed walnuts and I add either rhum or orange liqueur in the chocolate icing. Great minicakes indeed
In Australia we sometimes cut them in half and put jam in them and they are DELICIOUS 😍 🇦🇺

Oooh now I want to try to core one out like Jemma’s cupcakes and fill it, put the top back on and then dunk it and cover it. Surprise jam! Wonder if I can pull it off or end up in a gooey mess.
We make Lamingtons in South Africa too. When I was a child, we always memorised the birthday of the kids whose mums made Lamingtons for the obligatory school birthday treats at my school.

Yum, I love a lamington, especially the jam-filled version! I like to use a couple of baking dishes for dunking, because you can just pop them in, flip once to cover in chocolate, then repeat in the coconut!

I tried this recipe and they are ABSOLUTE PERFECTION!! The whole family loved them. It's so super simple and easy to follow. Definitely making these again soon.

You need to make these when the shop opens again! When I visited, along with my amazing cupcakes, I got a coffee and I almost cried because after weeks of crap coffee while touring around the UK and Europe, your coffee tasted exactly like what we get in Australia. I reckon if you had a lammo to go with it there would have been tears!

My mom used to make these when I was a kid. A really nostalgic dessert for me. One of these days I really ought to try making them, just to see how they turn out. Thank you for the recipe and instructions. Love your channel and videos.

Lamington is the king of all cakes from Australia. Awesome!
These are my favourite! In South Africa we call them Ystervarkies, which literally translates to "little porcupines".

I can’t believe this! I thought I imagined them! No one ever remembered them. They were my favourite at school canteen I never knew the name of them. Thanks so much
These were lovely Sally. My grandaughter couldn't get over how soft they were when I took yet another of your delicious cake recipes over. It's going to be banana cupcakes this week, and as soon as I can get hold of some decent red colouring paste, I will have a bash at the red velvet cupcakes. Many thanks for all these lovely recipe and tutorials you've been giving us. Jackie
Yummy lamingtons. Great Australian treat. We love these. I love making them.
We have similar cake recipe here in Finland, but the cake batter has also choco powder on it and icing has tiny bit of dark coffee. The icing is then poured on top of the cake and cut to pieces after it has cooled down. Coconut and coffee flavor go so well together. Love it!

Second time baking, the Butter is the star of the recipe. It is worth paying a bit for a good quality butter such as Lurpak. When the cake bakes, the entire room smells like that lovely butter. What a joy. This time I made it into a layer cake sandwich with strawberry jam and top with chocolate drizzle and a few strawberries. Love it. ♥️🍓
Wow! Those Lamingtons squares look so tall and perfect! They remind me Minecraft and I'm thinking to build my Minecraft home with those delicious coconut cubes :D
hello cupcake jemma and sally loving the baking lots off love xxxxx
Those look yummy! Such a lovely charming video. Thank you for sharing. I'll put this on my to-do list!
It's easier to use a sheet pan for the coconut cause you can just flip it around. Great Aussie tip right there :)

Hi Jemma, these lamingtons are a super hit!!! Glad to have made them.
Strawberry lamingtons are my favourite, and are really delicious as well. You use a not quite set jelly instead of the chocolate sauce, you can make lime, pineapple, whatever jelly you have on hand, and you fill them with whipped cream to eat.

I mean English jelly right? Like crystals not American jelly (jam) because I’m getting confused 😭

@@humi191 Jam is basically just jelly but with pieces of fruit. If you only have jam, you can heat it until it's liquid and strain it, to turn it into jelly.

Tried the recipe, definitely delicious :) Though I cut down the icing sugar of around 30g for the chocolate glaze, I still find it a little too sweet. Would advise you guys to cut a little too. Great recipe, will be making them for Christmas
