We love all recipes with ginger and spring onion as the base sauce. We've shown you how we stir fry beef in ginger and spring onion sauce, fish in ginger and spring onion sauce and even pork in ginger and spring onion sauce so how can we not show you how to stir fry chicken in ginger and spring onion sauce? This is an absolutely delightful Chinese stir fry dish that goes really well with rice or even porridge. We're salivating just at the thought of this dish. Everybody needs to know how to cook this.

Ingredients:
Serves 4 - 5 pax
Marinating the chicken

1 whole chicken (around 600g)
2 tablespoons of fresh ginger juice
2 tablespoons of Chinese white rice wine
2 tablespoons of oyster sauce
1 teaspoon of salt
1 tablespoon of light soy sauce
A few dashes of white pepper
Other ingredients

Some cooking oil
30g of sliced ginger
6 cloves of garlic
6 stalks of spring onion
1 cup of Chinese white rice wine
3 tablespoons of premium dark soya sauce
1 teaspoon of sugar
Some cornstarch solution
1 tablespoon of Chinese cooking wine (Shaoxing Huatiao wine)
1 tablespoon of sesame oil

    I cooked this dish tonite. It was delicious! I omitted the sugar out as my family prefer more savory than sweet. Nevertheless the dish still came out perfect.. I rate this dish 10/10. This recipe is a keeper 👍

    Normally this dish uses sesame oil, but that will cause ‘heartiness’ as like chilli hot as against sun hot, if you know what I mean. So, I might try this recipe, thx

    Thank you so much Sasha for your kind words. We simmered for 20 mins because we had bones in our chicken. Without bones, 10 mins should be fine. May we recommend that you use chicken thigh instead because it’s more tender than chicken breast. Happy cooking!

    Hi Jahliah. Can no problem. You can omit. Just today someone tried our recipe, she didn’t add rice wine too. If you’re concerned about the taste, you can add some chicken stock instead. Happy cooking.

    Ure dark soy sauce u added is the thick sweet type? I have Cheong Chan Caramel Dark Soy which is similar to the Dark Sweetish Thick Soy Sauce u add in ure Malaysian Hokkien Mee Video. Is this the type of Soy Sauce u use for this dish? Will it make the dish too dark? Also how much cornstarch slurry u added eg how many tbsp cornflour to water? Also u used 1 cup of rice wine (the clear type) is this amount to 250ml? Hope u can answer my questions ASAP very soon. Its very similar to ure sesame oil chicken & i am looking forward to cooking this, since my family ❤ ure sesame oil chicken recipe.

    Thanks so much Lilian. Yes, you can use the dark soy sauce that you have. You can add bit by bit if you do not want it to be too dark. I used 1:1 ratio for the slurry. For the rice wine, yes, that’s right. Happy cooking!

    Hi there. You can omit the wine totally. It will lack a little from what this dish is supposed to be but it should still be very yummy.

    By the way the weight is 600g right? Cos in the video i heard u mentioned its 1kg chicken. Correct me if i am mistaken

    I have tried 2 times by reducing the dark soy sauce but still salty. May I know what is the brand of your thick dark soy sauce?

    Hi Eileen. The brand is Kwong Cheong Thye. We’re using their chicken rice soy sauce. Oyster sauce and light soy sauce make a difference too. We’re using Lee Kum Kee.

    Hihi Grace - so sorry for our late reply. Been a really busy week. I don’t think this is a Cantonese dish. It should be a Hokkien dish. Hope I’m right though. Haha. Have a wonderful weekend!
