I literally thought the exact same thing. I figured it was maybe 10 minutes after I finished it. Was shocked that it was nearly 30 minutes. Every second was informative and well-explained. You win!

I work at Starbucks and I get so many costumers that want 180-200 degree lattes and I have given up trying to explain how milk ‘burns’ after 160 so now I just say ‘extra hot’ which it’s 150 at Starbucks. Only have had one sent back for being “too cold still” so I made it 160 exactly and she told me it tasted bad so I explained how milk burns after a certain point and she had no idea. This is why I want to explain it to costumers but I don’t have time for that because my Starbucks is top 5 busiest in the Pacific Northwest (yes I live in Seattle)

It can be a difficult line to ride when are asked to do something that you know is contrary to what will taste best for the customer. We also have customers who come in and ask for their drinks to be "as hot as possible." We kindly let them know that there is potential to burning the milk, but we will take it as far as we safely can.

What worries me is that at our Starbucks, the milk is steamed to 160 F by default. I hope this doesn't have an effect on the taste :(

Thank you for this!!! As a newer barista I've been trying to get my senior baristas to explain how latte art works but they could never explain it in a way I really understood. Their instructions were vague and I wanted to know exactly what motion and position I should be in and they just shrug like "idk you feel it out" and so far that hasn't worked out for me. So thank you for breaking this down into steps. I will practice on customers because we have to destroy the art with lids anyway.

Lidded drinks are a great way to practice. Even though customers don't get the full experience, there's something satisfying about knowing you put the effort into it! Cheers!

Interesting part about the surface tension! Something I've learned from experience but I could never really explain why this happened when teaching new baristas.
