做这款免揉牛奶面包是歪打正着,本想和孩子们一起玩免揉甜甜圈的,等我弄好了面团孩子们都忙别的事情没空做,眼看天气也晚了,我就做成了小的圆面包,没想到烤出来松软香甜非常好吃,记得之前有朋友留言让我出免揉甜味面包的,我连做三次感觉配方没问题就做出来分享给大家了!
因为这个牛奶面包的配方液体含量大(78%),不要用手揉面,就用硅胶铲搅拌到看不到干面粉就可以了,整形的时候一定要借助干面粉不然会很粘。两次醒发一定要到位,具体醒发时间要看自家的室温,我家室温22度左右,第一次发酵了接近两个小时,第二次面包整好形后放到没开启的烤箱里然后再放杯热水进去,用了不到一个小时就到两倍大了。
我家只有中筋面粉了,如果有高筋面粉就用高筋面粉做。因为各个品牌的面粉吸水性差别很大,搅拌面团的时候如果感觉太软可以自己加适量面粉做调整。这次加上量杯量勺数量(量杯量勺数的重量和gram数会有少许差别,但不太影响面包口感),希望没有电子秤的朋友也可以试试做。
Ingredients:
All-purpose flour 360g (2 1/4cups)
Egg 1(54g)
White sugar 25g (2tbsp)
Dry yeast 3g ( 1tsp)
Salt 3g (1/2tsp)
Warm milk 230g (1cup)
Olive oil 15g ( 1tbsp)
因为我家里酵母不多了,这个配方里的酵母数偏少,醒发的时候会长一些,如果家里的酵母存量多,可以加两小茶勺酵母粉会缩短醒发时间。
烤箱预热190摄氏度/375华氏度烤15-20分钟
Bake at 190°C / 375°F for 15-20 minutes

我十分喜歡你的简單receipe。這麽多年來我一直很怕做dough, 偶然見到你不用knead做麵包仔,就試試看,竟然成功了,現在克服了對做dough的恐懼,終於可以自己做麵包了,真是萬分感謝,請繼續介詔簡單的食譜,謝謝。
幾日前看到這個視頻,好像不太難,昨晚就立刻試做。在第一次發酵後(幾乎要兩小時)時間巳很晚了,便排了氣馬上就放入冰箱冷藏發酵。今早拿出來見到發得很好,便進行做型發酵,我這次放進烤箱裏再加一杯滾水,結果只用了不到一小時就巳發到一倍大,放中下層(因有4層)焗23分鐘,效果非常好,有少許拉絲的感覺,淡淡的牛奶香味,很好吃!十分感謝Helly的詳細資料,令我這個新手也可以做到這樣美味的小餐包。感謝🙏

I tried the recipe today with chocolate powder. Thanks for the recipe. However, I have the same problem that the dough was super sticky after the first fermentation and I added in a lot of flour. Anyhow, it turned out great and my family likes it.

希望想尝试做这个面包的朋友先提前看一下视频下面的描述栏,我再在这里做点补充说明: 一、视频里有提到可以用微波炉叮冷牛奶30秒,这个是指全部牛奶量,如果您做这个食谱的半份千万别叮这么长时间,牛奶温度太高会把酵母杀死的。 二、应家里没有电子秤或懒的用电子秤朋友的要求全部加上了量杯量勺数,量杯量勺的数量与电子秤称出的重量会有少许误差,不太影响面包口感,大家可以放心大胆的做。还有朋友每项都需要用电子称称出来的克数,现在也都全部注明了。 三、需要字幕的朋友打开视频右下角的CC,会显示中英文字幕(您的电脑或手机设置是中文就显示中文字幕,设置是英文就会显示英文字幕)。 大家在做的过程里遇到问题随时留言给我,回复可能会迟些,但我有时间都会给答复的,谢谢大家的理解和支持!

可以只用高筋面粉,也可以掺一小部分低筋面粉做,因为每种面粉的吸水性不同,要按照我视频的的面团状态调整牛奶应量,面团太干烤出来不松软,面团太湿不好操作成型困难。

谢谢Helly这个食谱。谱做了很多次都非常美味。昨晚再尝试室温发了一小时,冷藏隔夜。烤出来来的效果比没冷藏柔软很多。建议用2 tsp的酵母。

I must commend you on this recipe! Healthier with no butter and no knead also. I’ve made this several times and I had even better results weighing my flour. Thank you! No knead recipes are a great time saver! I don’t like washing my kitchenaid either.

I just tried making it but had such difficulty when I put dough onto floured surface it was just too sticky!! I had to add so much extra flour as it stuck to table.

Yes, it usually stays soft the next day if you seal it well in a bag after the bread has cooled.

Made these today. I had vanilla milk and no whole milk and it came out delicious. I just halved the sugar. But bread was soft and I'm so happy I did not need to knead it!

I read that typically for no knead method, the texture of the bread is lost. It has to be eaten on the same day. Any suggestion how can we maintain the same texture for next 2 days?

You can maintain the texture if the bread is very moist and soft.

I observed that you have different methods in different bread recipes like how you added the yeast in one of your recipes with water at the center of the dough minutes after it has rested. By the way, can I use bread flour instead of APF? Thanks.

Thanks Helly, made it today, it turns out really good, I prefer a little less sweet, will cut back sugar. 360g flour is quite a bit more than 2 -1/4 cup measurement, need to really pack it in. How to adjust recipe for 1/2 whole wheat?

Because whole wheat flour absorbs more liquid than all purpose flour, you should add a little bit more milk in the recipe.

我没有用过气炸锅,但看到网络上有用气炸锅烤面包的,大部分都用180度,你可以试试:)

可以,不过我感觉换算有点麻烦,这个面包个头也不大,不如还是用这个配方做成9个稍微大点的,烤20分钟也差不多 :)

可以,但液体量自己要做适当调整,搅拌好的面团很软但能成团。

高筋面粉吸水性强,要多加牛奶调整,免揉的面团一定要很软烤出来才松软好吃。

我的烤箱不能调节上下管的温度,没法实验,我感觉如果想吃表皮软点的,上管的温度不能太高。
