Stuffed Chicken Ottoman Way (Individually Served) A Festive Dinner: Piliç Topkapı
What if I make a dinner with the classic Thanksgiving ingredients adding Turkish tastes? Stuffed turkey, apple pie, pumpkin pie, cranberry sauce, and stuffings are all traditional dishes. With all these fall season fruit and veggies possibilities are endless to make different tastes.
I watched other cooking channels like @NYTCooking and @FoodNetwork and they are sharing new recipe ideas as well as classics. So I prepared a menu inspired by Thanksgiving: Instead of stuffed turkey, I am making an Ottoman cuisine dish "Piliç Topkapı" stuffed chicken thigh. We don't have cranberries much in Turkiye but have lots of sour cherries. And another famous Ottoman dessert of ours is "ekmek kadayıfı" that are still widely available. So using similar ingredients you can have where you live I am making "Vişneli ekmek tatlısı" Bread pudding with sour cherries.
Finally finish the menu with arugula, beetroot salad with crumbled cheese and a quick potato puré.
If you want to add more to the menu to make a feast for the crowd, try pumpkin dessert • Turkish Pumpkin Desser... instead of pumpkin pie, or apple filled cookies • BEST WAY To Make APPLE... that you can serve individually instead of apple pie. As a side dish, I would make "Yaprak sarması" • Turkish Stuffed Grape ... rolled vine leaves with sour cherries as well.

Ingredients For Piliç Topkapı:
6-10 pieces of boneless chicken leg with skin (The filling is enough for more then 10 chicken, you can get as much as chicken as you want to serve and eat the rest of the pilav filling as a pilaf)
salt, pepper, olive oil to season
For the filling:
1+1/2 cup long grain rice sokaed in 1 tbsp salt and enough warm water to cover for 30-45 minutes
2 tbsp butter, 2-3 tbsp olive oil
2-3 tbsp pinenuts (or try slivered almonds or skip)
2 medium size onion
2 tsp dried mint
1 tsp salt
1/2 tsp each all-spice, black pepper, cinnamon
2+1/4 cup hot water
handful of chopped parsley and dill
1/4 cup water (for the baking dish)
To brush the chicken skins:
1 heaped tsp tomato paste
1 tbsp olive oil
2-3 tbsp water
Ingredients For Arugula Beetroot Salad
1 bunch of arugula
3-4 beetroot cooked with skin until soft
about 50gr. or more Turkish white cheese (preferably aged) or feta
For the dressing:
juice of a lemon
1/4 tsp or more salt
about a tbsp pomegranate syrup
about a tbsp olive oil
clove of garlic (crushed)
Ingredients For Cherry Bread Pudding:
1 package ready toasted bread (unsalted) as seen in the video
250 gr. frozen of fresh cherries (if not pitted, pit after cooked)
2+1/2 cup water
1 to 1+1/4 cup sugar
For the pudding:
1 egg yolk
6 tbsp sugar
1 heaped tbsp corn starch
2+1/2 heaped tbsp flour
1 liter milk
3-4 pieces mastic gum (optional)
vanilla powder or essence
Also whipped cream or cream shantili powder whipped with cold milk as directed on the package

This is an extraordinary feast! In Canada, our Thanksgiving is the second weekend in October because our harvest is earlier and winter comes earlier. Many people here are doing some ideas like yours at Thanksgiving. Add a side dish or dessert from their historical culture. Because my dad was born in Hungary, we would often have meat and rice stuffed cabbage as a side dish on our Thanksgiving table growing up. Thank you for all your hard work! Every recipe is truly an education about Turkish/Ottoman culture and look delicious!!

This video came at the right time abla! My Turk husband and I dont like turkey and the regular Thanksgiving dinner and every year we usually have some.kind of fish but makesmso much sense to.make an Ottoman inspired dinner! That way we combine our cultures! Sağol!

That chicken looks fantastic, I would never have thought to stuff the legs like that. Ottoman style makes a lot of sense to taste similar to the kind of spices for Thanksgiving/fall (for example, mincemeat is made with meat, raisins, allspice, etc.). I tried the candied pumpkin with tahini sauce in Kapadokya... it's perfect... my favorite dessert after Aşure....

@@TFT I purchased it already cooked and frozen. It was cooked with wood smoke. It just needs to thaw and heat up. The flavor will be like cooking in a wood fire oven. They can be kept frozen for a year or more.
