Yummo !!! Suggestion: Next large flounder you cook like this, buy the 'PLAIN' Stove-top dressing, mix it with the body meat from a bunch of blue crab from your yard. Lotsa work, but it is very worth it. Sometimes I leave the stuffing out and just use the crab meat with butter and seasoning. Another way I stuff flounder.....filet all four pieces completely [no skin, no fins], put a top filet in thick aluminum foil on butter or spray, add a thick layer of blue crab body meat with seasoning and butter, lay the thinner filet [from the bottom of flounder] and pat down kinda flat and even, add more butter and seasoning, then close up the foil nice and tight. You can cook this on the Blackstone, on the charcoal grill, or in the oven. Cooking time will vary with size/thickness of filets, amount of crab meat, etc. So worth it. God bless you and family.

Foil, butter, flounder, crab meat [body not claw], butter/seasoning, flounder, butter/seasoning, close up foil tightly. You can make these up ahead , will keep in fridge 1-2 days, will even freeze well. Must be kept air tight. But you know the value in cooking/eating them fresh. Yowza !!!

For my fish stuffing, I mix Stove Top cornbread stuffing, with butter, and Cream of Celery soup, a little water, a little bit of Tarragon, a dash of lemon juice, and salt and pepper, then add either crab meat or shrimp. This makes a great stuffing. Normally, I serve the stuffed fish with Bearnaise sauce. People believe Bearnaise sauce if for beef, but it works well with stuffed fish. I use the Knorr Bearnaise Sauce Mix which is as good as homemade.
