Strawberry cake with vanilla pudding - Very creamy, very tasty!!
This cake is so tender, it melts in your mouth! Incredibly creamy and juicy. Light cake with cream cheese, vanilla pudding and strawberries. A delight for every palate! Cake in 15 minutes! You have to bake such a tender cake! A quick and easy dessert that tastes incredibly delicious!
Ingredients/Recipe: (1 cup = 250 ml)
Dough:
2 larger eggs
A pinch of salt
1 pack of vanilla sugar
80 g sugar (2/5 cup)
170 g flour (1 1/5 cups)
2 teaspoons baking powder
80 ml carbonated orange soda (1/3 cup)
Baking pan: 18 x 28 cm (7 x 10.5 inches)
Bake at 170 °C (338 °F) top and bottom heat for about 20 minutes.
Strawberry jam
About 200 g strawberries (1 1/2 cups)
Cream:
500 ml milk (2 cups)
2 egg yolks
40 g cornstarch (1/3 cup)
70 g sugar (1/3 cup)
1 teaspoon ground vanilla bean or liquid vanilla extract
200 g cream cheese (3/4 cup)
50 g crème fraîche (or cream cheese) 1/5 cup
Strawberry icing:
4 sheets of gelatin (7 g)
400 g strawberries (fresh or thawed)
1 tablespoon lemon juice
50ml water
2 tablespoons sugar (if the strawberries are very sweet - less)
Chill the strawberry cake for at least 4 hours.
