I mean, the chopstick thing is what I've been doing for years. Yeah, it's probably not a problem if you're cooking one grilled cheese and piping it straight into your mouth while you cook a second one, but if you're cooking a whole family meal and sending plates all at the same time, the steam does make it kind of soggy on one side. Using a single chopstick works pretty good too, and since you're not sticking them into food it takes twenty seconds to clean them all.

I like to burn 2-3 sandwiches, intentionally; like completely blackened on top. I set those aside for later, and when they're cool enough to not melt a baggie or storage bin, they go into the fridge for later. After sitting in the fridge steaming up the bag for a few hours, the hardened bread of this sandwich becomes soft and pliable, and imparts a different culinary experience. I've been doing it that way for 20 years or so, when I get a hankering for a grilled cheese. A happy accident from when I was learning how to not burn them.

I throw it high into the air while athletically pulling off my pants and flipping into a handstand in one deft move. As the crisp golden brown morsel floats down, aimed directly at my now open air, undulating balloon knot. Just as it’s about to grease my taint I let out the squeakiest, most powerful gas ever seen. The grilled cheese is suspended just above my spread cheeks, floating elegantly upon my purposeful, staccato like flatulence. There it dances for what seems like an eternity, barraged by my sputtering, resolute wind. The blood gathering in my head, eyes red with intense determination, a smile begins to form in the corner of my mouth as I know I’m moments away from having the perfectly crisp, never soggy grilled cheese sandwich.

Honestly the soggy grilled cheese in school that tasted like butter was one of the best I’ve had in my life. Still prefer it crispy but those just hit for some reason

I used to put a paper towel down on the plate, which helped, but now I just leave it in the pan and remove the pan from heat, then flip it back over so it doesn't burn. That way I can cut it too. Edit: since people seem appalled by this, I'll explain. I use a plastic spatula, so when I cut the grilled cheese in the pan it doesn't scratch the pan.
