I took my fresh beef tongue from my own beefs just put in a pot with salt peppercorns, garlic whole and boiled two hrs, cool toss the water trim off the membrane and fresh meat underneath. Sliced thin. Roasted peppers chili, bell, jalapeños, Plablanos etc, onion, garlic, tomato for twenty minutes then chop up food processor blend. Pour over meat salt and pepper to taste slow simmer for a hour. Best tasting stuff you ever tried.
