    Person servings: 3 Ingredients: Bai chai x1 Tofu x2 rows Wu hua rou / Pork slices (1 openhand size) Big red onion (half) Garlic (1 handpalm size) Dry red chillies (less than 1 handpalm size) Leeks (3 shots) Cooking oil (enough) Salt (enough) Vinegar (one round) Light soy sauce (1 tablespoon) Oyster sauce (half tablespoon) Steps: 1. Tear the Bai chai leaves one by one to remove dust and dirt. Put the Bai chai leaves in another big basin and add fresh water. Add enough water to wash the leaves. Add 1 tablespoon salt into the water and let it soak for 5 minutes. After 5 minutes, wash the leaves one by one until the surface is rough. In another new big pot, put the leaves and add water and rinse it to dropout all water and put it onto cutting board. 2. Chop the branch triangularly to remove from leaves. Chop the branch into horizontally half. Chop each branch vertically to 1cm width. Put all the cut branches to another new plate. 3. Hand-tear the leaves into smaller pieces. Put them into a sieves to dropout all water. (Don't mix the leaves and branches) 4. Chop the pork into flat slices. Put aside. 5. Get garlic, Remove garlic skin and hit-flat them (dice or not depend you). Put aside. 6. Get dry chili. Cut them to short. Add water and use hand to clutch them to wash them and drop out seeds. Drop out all water and put aside. 7. Get leeks, chop 45 degree the white part and chop down the green parts. Put aside. 8. Get tofu. Slice them on hand softly 1cm width. Put them aside into another plate. 9. In wok, add enough oil. Heat oil. When oil is hot, slide all the tofu into the oil. Rotate the wok so that the oil fry and reach all tofu. Rotate until the tofu does not stick and the bottom of tofu become golden brown. Flip the wok/tofu to fry another side of tofu. Fry until all golden brown where outside is fried and inside is soft. Set aside to a new plate. 10. Slice big red onion to small half moon. Roughly grab the onions up to remove each slice. 11. In another new clay pot, put the onion slices to cover the pot bottom. Put sliced leeks inside to cover the layer before. Put fried tofu inside to cover the layer before. 12. In a wok, add oil and heat it. Add pork slices and cook until slightly yellowish. Add garlic slices and cook until aroma. Add into red chillies and cook until aroma. Add the cabbage branches. 13. Turn heat to high so that cabbage lock its water otherwise cabbage lose its taste. 14. Turn heat to low. Add enough salt. Add little chicken stock. Add 1 tablespoon light soy sauce. Add half tablespoon oyster sauce. Then turn heat to high. Stir fry until fragrant. Add cabbage leaves. Stir fry until cabbage leaves are soft around 1 minute until all leaves are stained with bright colour. 15. Put all them into the clay pot. Use chopsticks to arrange a little bit. Put remaining leeks into pot. Cover and turn heat to low and cook 2-3 minutes. 16. after 2-3 minutes, while boiling, Pour a round of vinegar.

    Just love the cooking. But iam a total vegetarian do not eat even an egg. Also we do not get tofu in India I love tofu which I tasted in Singapore Indonesia Malaysia on several occasions I ate dishes made in a vegetarian restaurant.
