Chinese and english recipe/ instructions below :
材料:
1. 大約 240 克 = 8. 5 oz, 豬肋排肉
2. 2 粒蒜頭
3. 2 段青葱白色和綠色
4. 1 個小紅棘椒
5. 2 湯匙豆豉
6. 2 湯匙油
肉醃料:
1. 1 湯匙紹興酒
2. 1 1/2 茶匙蠔油
3. 1/3 茶匙糖
4. 少許鹽 1/5 茶匙
5. 1/2 茶匙生抽
6. 1/3 茶匙老抽
7. 3/4 茶匙雞粉
8. 1 1/2 茶匙豆粉
9. 1 茶匙水
10. 2/3 茶匙豆粉
11. 1 1/2 茶匙油
Ingredients:
1. around 240 grams = 8. 5 oz, pork spare ribs meat
2. 2 peeled garlic clove
3. 2 sections spring onion white part and green part
4. a small red chilli
5. 2 tbsp black bean
6. 2 tbsp oil
Marinade pork :
1. 1 tbsp shaxoing wine
2. 1 1/2tsp oyster sauce
3. 1/3 tsp sugar
4. 1/5 tsp salt
5. 1/2 tsp light soy sauce
6. 1/3 tsp dark soy sauce
7. 3/4tsp chicken powder
8. 1 1/2 tsp corn starch
9. 1 tsp water
10. 2/3 tsp corn starch
11. 1 1/2 tsp oil

Hi, I'm scared the the bowl may not fit in once i put the bowl on the rack when both are in the wok. I'm afraid of the height may be tall until I cannot close the lid. So can I place rack and the bowl into a big wok instead?

請問Maria我在肉店要怎麼買這影片中的(無骨的)豬肋排肉,除了pork ribs 這名詞之外,它有特定的部位名稱嗎?
想請問:1.爲什麽肉要先放雪櫃半個鐘,然後放豆豉,再擺入雪櫃1個鐘?可以一開始就放豆豉嗎?2.最後蒸的時候用錫紙的用意是什麽呢?

Hi, it s me again . We love this receip. I changed it a little bite ... I used half pork bones and half lean meat then I cook it in the Wok. I forward the video to few of friends as well. Everyone managed to do it. My friend gave me a tip. She freeze it after cooking. Now, I make 2 batched. One for the day and keep another one in the freezer !!! I have to check if you have a receip for congee. Thanks !

what other wine can i sub in for the shaoxing wine
This looks awesome, but really needs more than just a list of ingredients, like how long the meat needs to rest, at what temperature, how long to steam, why some of the beans are set aside, beans fermented or cooked ...
can i use canned salted black beans instead. we might not have black beans here.
I will try to make this once I get the black beans from a Chinese grocery store. I like to eat this dish in dim sum restaurants.

I think she wanted people to know it is Fermented Black Bean. She is smart by frying the sauce ingredients so that it will give the best aroma. But I will add in 3 Tabsp of water to the meat so that the meant will be more tender !!

Hi, black beans are very dry, hard and salty, the ones that I cut and stomped will be mashed but the seven others will mainly stay in sharp and just become a bit softer. So you can see them later on the plate and the flavour can add to the dish ^^

你好, 炒完豆豉料要攤凍後才拌肉一起, 如豆豉料巳攤凍可以一開始就放豆豉. 蒸時防止蒸氣水流入蒸碟味道會淡. 多謝 ^^
