INGREDIENTS
1 pompano fish, cleaned
4 tablespoons soy sauce
1 teaspoon Chinese rice wine
1 teaspoon white sugar
2 thumb-sized pieces ginger, sliced into strips
chopped onion leeks
2 cloves garlic, minced
2 tablespoons canola or peanut oil
1 teaspoon sesame oil

chef, talaga po bng leek yong ginagamit nyong png stuff sa fish o green onion?
I used white fish fillet and silver swan soy sauce, it turned out very salty kahit i added more water to the sauce. Maybe I should not marinate next time and adjust the soy sauce to be lesser. Will try the newer recipe of chef tatung on this steamed fish next time! :)

I think pwede naman po mag use ng olive oil or avocado oil, ginamit lang ni chef yung sesame and peanut oil for nutty taste and magcomplement sya dun sa mga chinese ingredients na ginamit ni chef. So in total para maging chinese cuisine yung fish. Pero if bawal with any oil, suggest ko lang na lagyan ng sesame seeds yung marinade and the stuffing inside the fish para atleast malapit yung taste sa original, kaso mas less lang yung lasa since one of the main ing. Si sesame and peanut oil. Note:i toast sa pan yung sesame seeds para lumabas yung lasa..

magaling talaga sya magluto. Nsgtataka lang ako bakit hindi nya nilagyan hiwa yung magkabila ng isda, diba dapat meron para pumasok yung lasa sa laman ng isda? Just my observation😊

You can use other variety of rice wine like sake, soju, or mirin. Yung rice wine po nagbibigay ng moisture and tenderizer na rin sya sa fish. Yung chinese rice wine may distinct na lasa and amoy sya, ika nga nila lasang chinese. Nag suggest lang po kasi meron po akong shaoxing rice wine aka chinese rice wine. Pero i think pwede naman kahit wala kaso may mawawala na lasa pag ganun. Mayroon naman po nabibili na chinese rice wine sa supermarkets but pili lang na store karamihan sa malalaking supermarkets. Pero meron din sa shoppee. Hope it helps thanks.

Yung pompano ay may pino-pinong kaliskis na parang buhangin o liha. Dapat ba muna nitong kaliskisan ng mabuti?

That's not leak that's green onion. Leak are 3 times larger
Leeks and green onions are not the same. They are 2 different things. You’re using green onions , not leeks
