Steak Pie | Best of British Series Classic Steak & Kidney Pudding | John Quilter
This is my Steak & Kidney Pudding, one of the most iconic and distinctly British dishes. A classic from Victorian times you have to have one S&K Pudding in your life. What makes it unique is the suet pudding pastry, made traditionally with the suet (fat) that encases the Ox's kidney. This makes a rich, crumbly, distinctly beefy flavour that envelopes the meat inside. I recommend you try it and let me know what you think.
FILLING INGREDIENTS
150g Oxtail
150g Beef Shin
100g Ox Kidney
1 medium onion
50ml warm water
1 tbsp marmite
2 tbsp apple cider vinegar
Seasoning
PASTRY INGREDIENTS
200g Self raising flour
100g suet
150ml water
1 egg yolk
5 - 10g salt

I had steak and kidney pudding for the first time at the Fox and Hounds inn, just north of Tavistock in Devon. There is nothing quite like it, it's truly the taste of rural England at its finest.
This is what I love - A real knowledgeable cook, cooking his country's best dishes!

suet pastry is without a doubt my favourite pastry but it's something I don't eat very often. Show it the reverence it deserves and save it for special occasions. That pudding looks amazing. Top job on that one sir.
Followed you with this recipe a couple of months ago and was really pleased as was my friend how it turned out. Took my time with care and have made it again today. Shall be looking at other recipes you have. Absolutely scrumptious.

Looks good. I believe here in the Phoenix, AZ area I can find onions and marmite. That's about it.

Pre-cooking the filling is a bit of a cheat. Interesting to compare this to Raymond Blanc's method which he based on Jane Grigson's, thus with a long pedigree. His best trick is to soak the kidneys first in milk, which removes that horrid tang of ammonia which otherwise gives the pudding a hint of dog pee. He also adds oysters, which sounds incongruous but is a real game-changer. Of course it needs hours to steam and it's the slow-cooking that develops the extraordinary flavour.

My dad who worked as a builder would have a whole one made in the winter, come in from work and demolish the whole pud to himself, up North it was known as a Big Yin or at least by my family, made exactly the same as yours, LOVING these new episodes, like a step back in time, Keep up the great work John.

Sherlock Holmes in terror by night ordered it for dinner on the train . As an American the idea of eating kidney and all that heavy sauce and all in a pudding . I don’t think I could eat it even though if it’s good enough for mr Holmes I should try it once any way . What would you recommend? Cheers

I was brought up on suet puddings....my family came from the east end of London where this was traditional fare. Mum would make a plain suet pudding on Sunday. We would have half of it on our roast dinner with gravy and then the other half with golden syrup for afters. I live in Spain now and still make it 😉👌
Thanks John for your meticulous description of how to make this iconic pudding. I cannot wait to follow your instructions. Yesterday, I went to a Devon pub that is very highly rated and I asked if the steak and ale pie was "bought in" to which I received a "what do you think" response. Of course it was made with amazing suet pastry and absolutely delicious. Duly subscribed and thanks again.
John, back to your best. This is simply iconic and such a good recipe... I have never used oxtail in mine but I am damn sure going to be trying it tomorrow (IF I can get oxtail which is so difficult these days). Excellent vid, good to have you back to the old you. As most of us have been with you for years now, can I make a request on behalf of most of us... give us more? Either longer vids or two of these short ones a week. I love, love your cooking!!! I'm making Christmas Pudding for the first time for my friend who can't go home to England because of the pandemic...😞. I'm really glad you made a pudding with suet because I've never used it (I can't get it right now) and I didn't know I could get it in a powder form. Steak and kidney suet pudding? Well, I remember my dad saying that it was his favourite? Years down the line, I now say unequivocally, that it’s mine now too? After all, what’s not to love about this absolutely faultless British classic!!? It’s the very pinnacle of comfort food! Delicious

It was my mother's signature dish. She was not a great cook, but her steak & kidney pudding was to die for.
While I make my pudding somewhat different to you, I do agree that it is one the best comfort foods you can have, it is fantastic.
Swoon .. oxtail and beef kidney. Delicious cooked separately, but bathed in your gravy and robed in your pastry. .. Otherworldly. As an expat it’s been decades since I’ve had anything remotely steak and kidney pie like. Gonna have to do this, suet and all.

I've never had kidney. I'm American and I've seen plenty of unusual cuts of meat in stores (trotters, livers, hearts, chicken feet, tripes) but I don't think I've ever seen kidney available in the supermarkets or the Mexican stores either. I would try this John.....but only for you do I do this.
Wonderful stuff! We get a few lambs every Fall and make Steak and Kidney Pudding with beef, lamb's kidneys, and lamb suet. Delicious.

My favourite thing to eat growing up, runner beans and new potatoes extra gravy.
Top ten!!? Number one in my book. Really good presentation. some great tips. I've seen and read variants, and I have to say I prefer chunkier pieces like chuck steak over your shin, but the addition of oxtail is worth trying. Also, be more adventurous with your liquids, Marmite is great, but get a bit of Worcester pep in there, and I also add a bit of mustard. Even a drop of beer or red wine. That said, I die for suet puddings, dumplings or pastries. Non-Brits out there, he's right, it's the ultimate comfort food, try before you die.

John Quilter. I love your channel. Good job, buddy! I’m obviously from the US, but I’ve always wanted to try an authentic British breakfast. I love to make sausages, and that is the hang up. I don’t know or can’t find a satisfactory recipe for British sausage. I know it’s not the same as US sausage ( mostly fennel and chili flakes). I’d love to hear what you guys do.

Couple of classics would be Cumberland or Lincolnshire-style. I like making Cumberland because they're traditionally long & coiled, so less tying off. Buy by the yard, not a dozen sausages! For me, I use pork shoulder just skinned & trimmed of gristle. Give that a coarse grind, mix in a good bit of pepper, thyme, sage, salt and some cayenne, and add around 2oz of breadcrumbs (or wheat rusk if you can get it) per pound of pork to help bind it. Main thing is I think it should be >90% meat. Lincolnshire's much the same, except presented as 'normal' banger-sized sausies and the seasoning is more thyme & less pepper flavour. I think one difference between US & UK sausage making is US recipies tend to recommend seperate leaner meat & fat to get some 'ideal' meat/fat ratio, when a decent pork shoulder or pork belly should have enough fat to use without faffing around seperating those.

Ok...to end my comments I have some British food suggestions for your amazing series: You've never done a Full English Breakfast, even on Food Busker, that I can remember anyway...And I can't find black or white pudding anywhere and it breaks my heart. I know it might not get the hits, but Rabbit is showing up at my Atlantic Superstore...Rabbit Stew is so British. Chip Butty - John Quilter Style. Ultimate Roast Lamb Bangers & Mash or Toads in a Hole - how to make/find the perfect bangers? What makes a true British Banger? Sometimes I find good ones...Tastes like maybe black pepper and coriander? Very meatly sausages without the large fat chunks of say, a Johnsonville sausage. (again here in Canada with Superstore) Boiled Dinner!

Oh man. This looks AAAACE
I'm not really a fan of kidneys due to the texture.. But there's something about this pudding, and the smell that comes from it as it comes out of the oven & is cut open. Guaranteed to get my mouth watering, and awesome with spuds, runner beans & a rich gravy. Also glad it's not just me that adds a dab of Marmite for extra awesomeness! I stand mine on a scone/cookie cutter for extra safety while cooking because soggy pudding is not best pudding :)
John, I'd LOVE to see a dish of Bubble & squeak with a cottage/shepherds pie. Can't get more British than that! Or if you want to be a big boy... Show us a true Sunday roast again!

Nice recipe, yes we did call them 'Babies heads' in the Army, they came in a ration pack tinned in Menu C on a 4 man ration pack.
i wanna be experimental and make a hybrid steak pudding pie ,so a shortcrust steak pie but under the top pastry is a rolled layer of suet dumpling mix to give it that suet soft texture beneath the topping, edit ,maybe above the base so the gravy absorbs into it better like a stew
I recently made this for the first time from an old(ish) cook book. I happen to make my own tallow is the beef fat. Any way it was bloody beautiful. My husband can’t have the wheat so I did his as just meat and onion no liquid added and it was the nicest meat we’ve had. Have your checked out Townsends page? It’s an American page where they do oodles of thing including cooking from centuries old methods. Their recipe of course is cooked in the floured cloth. Try it everyone it is amazing.
