The family used to have Sunday lunch at my Grandparent's house every other weekend and I loved watching my Grandmother cook. I miss her more than words can say. Her beef gravy was to die for and she took the whole recipe to her grave but I think I got about 80% of it. It's funny what you really miss as you get older, but I remember that pot of Gravy simmering & the smell was divine!

I just adore Julia Child, that woman had so much natural charm and charisma - and boy did she know food! She did an excellent full cookery course on video in the '80s (when she was in her 'seventies) and it is superb for anyone who wants to learn the basics of cooking everything - right across the board. Some kind person once uploaded the entire video set to KZread, it's worth searching for if you haven't seen it. An amazing masterclass in cookery from the great lady herself, each video focuses on two areas of cooking, eg starters, vegetables, fish and seafood, poultry, desserts etc. It's wonderful, can't recommend it highly enough.

I like it that you don’t tell people this is how you have to do it, (unless it’s a health/safety issue). You tell us it’s okay that we don’t use alcohol or a specific ingredient if we don’t normally have it on hand or “…not yike it!” as my son says. He’s diagnosed with developmental delays/disabilities & he has “issues” with some textures… but I’m working on introducing him to new tastes. There are some things I can’t do either lol like coconut & cooked peas lol. Our son likes watching you cook too.

Chef Jean-Pierre is the best KZread chef for actually learning technique instead of just recipes. I feel like all the other KZread chefs come up with a recipe, figure out a way to throw some jokes in there, and almost half script it. He just cooks and teaches the basics and always says "or whatever makes you happy" or "whatever you have at home" instead of saying "this is the way it needs to be to make MY recipe." Always a pleasure watching his videos

But how is it “on a budget”? Choice strip steak is one of the pricier cuts of meat in any supermarket. $30 for those 2 steaks, $5 for lg mushrooms, 5 for potatoes 5 for pepper.onion 3 for spinach, $2 for fresh tarragon, 5 for butter oil and SP used ….add half a bottle of decent wine and we are up to $35+ per person.

@@HBSuccess if we're being realistic here, if you are on a budget, steak shouldn't be on the shopping list. It's become one of the most expensive items in the last 2 years. In my area I was able to get beef short ribs, trim them down and cook them like a steak and enjoy it, but even prices for that cut of beef has caught up. I hate to say it, i'm not on a food budget but I hate paying the prices for these shit steaks, I'd rather go buy a walleye or salmon fillet for $6 per person and make a side and a salad bump it up to $9-10 per person....much more reasonable.

I'm British and just bought a pack of two fantastic quality rib eye steaks from Aldi for £7.99. Yes it is a treat meal, but for me that's an affordable treat every few weeks - I certainly couldn't afford to buy the same steak from a butcher, who would charge at least double. Aldi is excellent for all food, but their choice, quality and cost of steak is amazing - they even do Wagyu steak now, which I haven't tried as it's always sold out, but like their rib eye has great reviews from foodies and is only a bit pricier. With the price of gas and electricity rocketing, steak is quick to cook which is certainly one plus for it - and chefs should be aware that many of us are now rationing our use of the oven. I recently heard of a woman who has her electricity on a meter. She cooked a medium size chicken, and was shocked to find roasting it had cost £11 in electricity! I am now trying to cook several items together in the oven to save fuel, eg meat, plus roasted veg, maybe Yorkshire pudding and sometimes a dessert too like a rice pudding (which takes one and a half hours, so I would not now cook it alone). Sadly this cost of living crisis will affect people in all kinds of ways. In the UK Summer is approaching, when the heating is off and we eat more uncooked foods like salads and generally lighter meals. But come Winter it will be a struggle for many to heat their homes, and cook, as well as buy their food. Scary times.

After I remove the steak from the skillet I would toss the parboiled, quatered potatoes in that skillet to pick the brown bits and drippings, just saying. Chef, if you ever feel like experimenting, when the steaks come off the heat to rest, place them in a metal cake pan (lightly cover with foil) and douse them with some splashes of Lea & Perrin Worcestershire sauce (adds salt). Shake the bottle. Makes a lot of excellent juice to pour over the steak on the plate.

you're just the guy to watch making the perfect steak - with some twist to it. Some beautiful potatoes and some mushrooms. You express yourself while cooking, I love that, because you explain how to do it. It is quality of ingredients, knowledge and then some love and training. Please keep spoiling us. Love your new intro. It is the most french yet.

I bought a New York Strip a few days ago and lightly salted and let it sit in the frig a day. I followed your directions on the perfect steak. I used Avocado oil and seared the steak on each side and made sure I preheated the oven to 500 and cooked it 4 minutes and came out with an awesome steak. I used some black pepper corn grinder and that was it, and baked a potato to eat with it! The place I bought the steak cuts them thick, so it worked out perfect! the place I bout it, a farmers market, it was a little over 16.00 dollars a pound, and the steak was a bit under a pound, so not too bad.

I don't think he would be the same on food network....they would edit the hell out of him to fit their 30-60 minute showtime, we would lose that great personality! Chef Jean Pierre is the only cooking channel we ever watch anymore, because he is REAL! He would probably have to stop giving us hints on certain brands he uses, and wouldn't be able to call out his local sources for seafood, ingredients, or give other chefs recognition like he does, etc. It was a fortunate accident we found him on KZread!
