Star of Salt Fat Acid Heat, Samin Nosrat, Makes Her Grilled Artichokes Recipe
Samin Nosrat-author of Salt, Fat, Acid, Heat and host of the new Netflix show of the same name-is in the MUNCHIES Test kitchen showing us how to properly clean and cook artichokes. Both her cookbook and the show are about not only great recipes but also solid cooking techniques and instruction on how to build flavor. My only complaint about "Salt Fat Acid Heat" is that there's no comment section on Netflix for me to say how much I enjoyed the series. Would love a follow-up season or related series with Samin Nosrat.

I know, right? She's an excellent teacher. I love how she explains the reasoning behind what she's doing, but instead of coming off as "lecturey" (lecture-ish?), she's so entertaining to watch. I also love how passionate she is about her craft.

Oh my gosh I got so excited when I saw Samin in the thumbnail. Salt, Fat, Acid, Heat was AMAZING. I really hope she does more. I think it is so soothing to listen to her talk and watch her at her craft!
Her happiness and passion is so contagious! I am so glad she is getting the spotlight she deserves.

@@jacksadler8090 I've always found that phrase to be so strange. Like, I get it, it's a very heat-proof material. But we're also leveraging imagery of the person preparing our food having hands made of a famously toxic substance.

I love watching recipes like this. I'll probably never grill artichokes, but now I know what the term "macerate" actually means and a few other little tidbits!
Samin seems like such a fantastic person and teacher. And her laugh is so infectious!
She is really natural behind the camera, and super informative without being boring. Really nice! I might just buy that cookbook...

I love the way samin teaches and cooks cause it’s what makes sense! The tricks about salting the water, letting garlic/onions sit in the lemon juice for a bit before putting in the oil...it’s the old school logical tricks my grandmother taught me that makes my cooking great!
She did a great job on her Netflix show.
Love the way she has so much fun cooking. . . She is obviuosly a great cook but she never gets overpowered by the details of the recipe. She just loves what she is doing and it shows. I have a feeling that if she totally trashed dinner everybody would still love it just because she would be so darn entertaining.
This looks like an awesome artichoke recipe. Will have to try it this summer because I always end up with so many artichokes in my garden I give more than half away

She is such a treat to watch! Her book is incredible.
She's great! I could watch her cook all day.
As a chef myself I can see how passionate she is about food and how she understands the cooking process, I loved how she said that you don't always have to follow a recipe to a T and to trust your instinct, this something that makes a good cook for sure!
I love Samin. She loves food and has such a sense of fun. She is a natural on camera too so I hope that we get more videos from her. I watch “salt, fat, acid, heat” regularly, and would love to watch more.

Came here to say this. Artichokes are so expensive, to throw so much of it away... those leaves steam up great, eat the tips with dip of your choice (drawn butter + brown mustard!).

Auggh. You are throwing away the leaves which when dipped in mayo and the flesh scraped off by your teeth is edible, and delicious . If you don't know the basics of an artichoke, you shouldn't be making videos about them. Lost all my respect for your expertise in the kitchen. Plus being so irritated at your obvious lack of knowledge.

@@laurapruitt7156 I thought I was the only one who was irritated by Samin. To be fair, you only criticized her wastefulness, but I just don’t understand the love affair with her. She may be telegenic, but her culinary skills are lacking if she thinks throwing away 3/4 of the artichoke is a good plan. I watch cooking shows to improve my kitchen skills, not because I want to be entertained by a charismatic person.

Watched the Netflix documentary on her travels with salt, fat, acid, heat Very impressed with her command of Italian while she was in Genova Sampling Ligurian cuisine. For an American born Iranian she has Certainly made her mark in the celeb chef world. Wonder what other languages She has mastered. FRENCH, perhaps?? Congrats
I get boatloads of artichokes each year and she's right. All that stuff she peels and chops off is totally inedible. This looks like a great timesaver at the table. Sticking her finger in boiling water and hand (HAND!) tossing HOT HOT HOT vegetables? What is this woman's super power?

That looks so beautiful. My laziness prevents me from working that hard to get an artichoke prepared for grilling but I will definitely find a restaurant that serves them! Thank you so much for the idea 😊!
What a great teacher!
If disposing of so much of the artichoke before getting to the heart bothers you, you can of course make traditional boiled artichokes, which makes the undersides of the leaves deliciously edible (you get to enjoy the hearts, too) or Roman-Jewish fried artichokes. For the latter, you DO have to remove most of the leaves, but not as much as for Samin's dish.
In Vietnamese culture, we have artichoke tea made from taking the water you used to boil / steam artichokes in and adding rock sugar. Pretty sure you could do that with all the leaves and add a use before you toss them.

We eat the whole thing and dip the leaves in a white sauce. The bottoms are considered a delicacy.
I can't stop watching you, lol! Anyways, I'm not a fan of artichokes, but I learned so much! For instance, your kitchen tricks to not only season vegetables from within, but to expedite their grilling process (hence, the grilling taste) Thanks again, Samin!

when I was little my mom fed me steamed artichokes with dip and it was a ritual to peel off the leaves one by one and nibble on the bit of meat at the base end, until reaching the “goblet” part. to me THIS seems like a tremendous waste of good food hahaha but also a delicious recipe!
It’s called Artichoke coz it’s taken from the Arabic equivalent Ardi Shawki أرضي شوكي Shawki means full of thorns referring to the harsh peaks of the vegetable (leaves) that might hurt or cut your fingers when touching them :)
My Step Grand Mother, used to grow artichokes, and make Jerusalem Artichokes, a pickled condiment.
