STABLE WHIPPED CREAM FROSTING WITHOUT GELATINE │ MASCARPONE WHIPPED CREAM │ CAKES BY MK
Whipped cream is one of my most favourite things to eat, but the problem is, it's not so great to use when it comes to cake decorating because of how soft it is! In this video I'll be sharing with you guys a really easy way to stabilise your whipped cream, so that it doesn't lose it's shape! 1/2 cup (50g) of icing/powdered sugar
1 tsp (4g) vanilla extract
1 cup (225g) cold mascarpone cheese

OMG this is soooooooooo much nicer than the sickly buttercream! YUM!! 60 people i had over agreed that the flavour of this was amazing!!! I added fresh lemon zest to it too ;)
I LOVE whipped cream on pretty much anything and this is my favourite trick to make it stable enough to pipe on cakes and cupcakes 😍😋 So pretty and delicious ❤️

Same!! :) Whipped cream is my favourite, and with the mascarpone cheese it's like a match made in heaven! It is dangerous though whenever I make it, because I always end up eating waaaay too much :P

Amazing recipe! I normally use whip cream for cake decoration, and occasionally use cream cheese whip cream frosting. But I’ve never thought of using mascarpone instead. Can’t wait to try it! Thank you.

Very useful. Love it ❤️ Could you please make a video showing few piping style that could go with this recipe? I’m wondering can this recipe using for piping a rose with Petal tip? Does it hold the shape well? (Of course can’t compare with buttercream and non dairy topping cream) but as long as it can hold shape for a little bit of time it would be nice because this kind of fresh cream taste lighter, nicer, and not heavy taste like butter cream.

Thank you Linh! Glad you found it helpful and will keep your video suggestions in mind for the future :). In terms of being able to pipe a petal with it, you will be able to (just make sure you pipe it on right after you make it, as the longer you leave it to sit, the consistency of the whipped cream will change and won't be as smooth for piping), and it will hold it's shape well for a couple of hours (longer if you keep your cake in the fridge), but just keep in mind that it is a soft frosting, in that it won't form a crust like an american style buttercream. Hope this help! :)

Do you have any tips for coloring the frosting? Is it best to add color at the beginning and whip it up together? And if I'm trying to get a really dark red, will the microwave hack for gel food color still work with this frosting? Thanks!

No problem! :) and it's best not to let a whipped cream frosting sit for too long before using it for decorating, as the consistency of the whipped cream changes (it becomes less smooth when piping/smoothing it out on a cake). However the taste is exactly the same and it's just as stable, so it really depends on whether you're going for a nice smooth look or not :)
Hey MK! This looks great! Do you think I could use this in an entrement mould instead of a mousse with gelatin? Would it be able to hold its shape and give the sharp edges as per the mould ?

Hi there :) thank you! And hmmmm I don't think this will set firmly enough for a mould, unless you use a non-dairy whipping cream in place of the fresh cream, then that might work. Would love to hear how you go if you try it out! :)

Hi Sophie! So glad to hear you're enjoying the content :) And yes you can totally flavour this with some coffee! In terms of the sour cream, I've never tried before but I imagine the taste will be a lot stronger as mascarpone is relatively subtle :)
Hello! I tried the frosting with a three layered cake in combination with mango chunks in between the layers. Once the cake is cut, it kind of starts falling and the frosting doesnt hold shape for long. Is there anything that could have gone wrong here?
Love this recipe. But pls if I'm to use a powdered whipped cream, what do u think the measurement would be?. I'd also appreciate if you can also upload a video of doing a stable cream cheese powdered whipped cream . tnx.

Hi there! Glad to hear you liked this recipe :). Hmmm I'm not too sure as I've never used powdered whipped cream before sorry! It may be best to find a quantity converter online. And thank you for the suggestion will keep it in mind for future videos :)

Hi Cecilia! Yes you absolutely can :). Just keep in mind it isn't as stable as a normal buttercream so is best kept refrigerated :)

The whipped cream we have in our country is already sweetened.. adding more sugar will make it even more sweet.. can we skip adding sugar??

If you were to use cream cheese instead of mascarpone cheese. Would you still use 1 1/2 cups of heavy cream & 1 cup of cream cheese. Jazak allahu khairan for making this video after I requested for it🍰🧕🏽💜

We dont have access to heavy whipping cream in the place I live. Will 30% fat work ?

Hi Usha! It is a stable frosting, however in very hot climates it still may be best to keep the cake in the fridge as opposed to out at room temp. Hope that helps :)

Hi there! If it is very hot then it could soften quite a bit. Id recommend keeping the air conditioning on and the cake out of the sun :)
Could you use just mascarpone as the main ingredient and forgo whipped cream to make stabilized whip cream, would that work? The reason why I ask that, I’ve made mascarpone many times. It’s funny when you say, “if you don’t have mascarpone…” while having the very ingredient on hand, heavy cream. Mascarpone is essentially thickened whip cream.

Good question! I never knew mascarpone was simply thickened whipped cream so thanks for that! I guess you could but mascarpone is quite rich, so to use it on it's own may be too strong, whereas with the heavy cream mixed into it, it makes it a lot lighter and probably more pleasant to eat as a frosting :)

I'm not sure of this sorry! You'll need to find a whipped buttercream recipe online as the quantity of each ingredient may be different :)
Could i know the size and cake layer this frosting can cover?
