OH. MY. GOD! .... I made this dish tonight. I made those noodles from scratch and followed your recipe and was LITERALLY blown away at how wonderful this dish. Hi Chef, my Sicilian grandmother made a version of this dish by adding an egg. She then sprinkled with Romano cheese to serve. Delicious!

Last year I lost my mom due to Heart complications from the MRNA vaccination. Today would have been her birthday. She loved watching your videos. I think she had a crush on you. I used to sit and watch them with her and my dad when he was still here. This is a very tough day for me. But I'm watching this video right now in her memory. And I appreciate that it's here. Chef I never saw this recipe made this way. It looks delicious. My mother is from Sicily and she used to make it with Sardines, fresh Fennel Garlic and toasted bread crumbs. I'm going to try your version on March 19th. Thanks, Perry

Beautiful !! I got Bread for St Anthony's Day & my brother got pastries for St Joseph. I always used to say, " why only bread " for me & no pastry, so now I'll use this recipe for me & say , it's for St. Anthony's day .😅 This is one of the dishes I had on Christmas eve also. Thanks for sharing

So it looks like the pasta water one adds to the skillet doesn't have to be the foamy part. I was led to believe that on another show but no biggie. I'll start doing it your way, Pasquale.

I grew up in an American/ Italian home and to this day I’m still learning of a new pasta shape I’ve never seen before. Will try to find some cause it looks like it’s delicious holding sauce. If not I’ll try it with lasagne pasta as a substitute
Mafalde is my favorite pasta. Not every store carries it. For March 19th St. Joseph Day we always made pasta con le sarde or known as pasta milanese with fennel. We use perciatelli pasta for that.

Great dish. Make sure not to overheat the anchovies or they get bitter. Probably add the garlic first, then the anchovies.
you bring me great memories.. my grandfather from Isernia, would always ask me to get the martello, the beadavide and the cianutz
Ciao Mr. Sciarappa.....When my Grandmother made this, she also used finocchio (fennel) in her recipe. This was how it was usually prepared in Sicily and Southern Italy.
That looks fantastic Chef, thank you! You can add actual sawdust by substituting the Pecorino cheese for Kraft grated parmesan cheese!

Do it! You really don't taste anything fishy when they melt down. They just add salt and umami.
What about the St Joseph's pasta with the sardines and the fennel

I have a question for the chef or anyone really. When cooking for those with a sodium restricted diet (2K mg per day), how does salt in pasta water play into sodium content in the meal? I realize anchovies are salty, along with olives or capers when doing other pastas like puttanesca. Those I think can be measured (and rinsed) for the most part. Does the salt in pasta water come into play as well?
