About Sri Lankan Cuisine
Sri Lankan food offers a vivid array of flavor combinations: sweet caramelized onion relishes, bitter melon, spicy scraped coconut, and the burn of curry tamed by mild rice, and palm sugar sweetened desserts. Samosas and dhal (lentil curry) look familiar, but upon closer inspection, these, too, have a definitively Sri Lankan spin: these thinner curries tend to be more heavily spiced than many Indian versions, and the cuisine is more inclusive of non-native ingredients, brought by international trade moving through the island. Foods that seemed to be known territory find exciting new applications in Sri Lanka, where noodles come in pancake form and pancakes serve as both bowl and base of the feast.
Sri Lankan food is not for the timid eater: the fiery curries, sweet caramelized onion in seeni sambal (onion relish), and sour lime pickle are all dominant, powerful flavors that startle awake senses dulled by the thick, hot island air. Rice is an ever-present antidote to these big flavors. A meal in Sri Lanka is called "rice and curry"-a term that's almost synonymous with food in general. There's rice, of course, and usually a curry with a thin broth and large chunks of the featured protein (beef, pork, fish, goat, and on from there), plus an assortment of side dishes-anywhere from four to nine or ten, depending on the time and place. For a quicker bite, there are "short eats," a Sri Lankan term essentially denoting snacks-often a coconut roti with hot sauce, a newspaper cone of fried spiced chickpeas, or maybe a samosa.
75% of Sri Lankans are Sinhalese (mostly Buddhist), and the food generally described as Sri Lankan is their food. Tamils (mostly Hindus), especially those in the north, use slightly different spices and other ingredients in their curries, but the format of the dishes is similar to food found on the rest of the island. Many Westerners' only reference to Tamil culture is the Tamil Tigers, a group of militant separatists from the north.

    As a Sri Lankan, I don’t think this is an authentic Sri Lankan recipe. However it seems quite tasty. Sri Lankan‘s usually don’t use bay leaves, soya sauce in their authentic recipes. We would rather use a little bit of vinegar in the marinade. We also use roasted curry powder.

    @@DelhiMan-xb8nm no, Sri Lanka has it’s own curry powder. We have the roasted curry powder and the unroasted curry powder. We don’t use cumin powder or coriander powder as it is. Certain whole spices are ground, with different ratios, and combined together to make our specific curry powder. It’s called thunapaha and the other is called badhapu thunapaha.. It’s unique to the country and not to a race.

    Nice it came out great. There are lots of variations of this recipe. As a Sri Lankan myself, I haven't ever added ghee, Indian bay leaves, soy sauce or added spices un-roasted. But definitely lots of black pepper and thick tamarind juice and ground Garcinia. ( That's where the sourness and black color comes from. Also helps curry last longer at room temperature ). I guess that the ultimate essence of curry is it is customized to the taste and liking of the individual. It is meant to be customized. This one looks great 😍

    Hi the curry looks tasty. Just a small fact. This recipe is not the authentic one. The dark colour doesn’t come from dark soy sauce . We never use soy sauce Btw . It’s coming from our Sri Lankan roasted curry powder. But your version looks mouthwatering 🤤

    I like this recipe, made slight changes. Used roasted Sri Lankan curry powder and tomato paste instead of the dry powder/chopped tomato. I also cooked on med-low heat until the gravy was gone and it was more dry/oil separates. It takes much more time but for those who are willing to try, it is worth the effort.

    We never use bay leaves ,but we use cuury leaves and pandan leaves ,to make curry ,if you want to make black chicken curry ,make rosted curry powder not soy sauce cumin seed not into the oil we dry rosted all this seeds (cumin,fennel seeds ,fenugreek seeds,cloves , black peper , cardamom ,mustard seeds, coriander ,rice, ) .and we use coconut oil in srilanka ,to make eny dish but you can use any cooking oil,any way, i like your recipes

    Soya sauce? 😂 Authentic Sri Lankan food don't use soya sauce instead use roasted Curry powder to get the dark colour . Also slow cook until chicken releases its water , after that add thick coconut milk.

    @@getcurried I made a small variation and it came out really good. The variation was in addition to coconut milk, I also added that coconut pulp made into a complete paste and used the pressure cooker to shorten the cooking time. Thank you once again for your share!

    Sri lankan cooking, we use Rampay (pandan) leaf. Not bay leaf. Rampay has an authentic earthy flavor of ceylon.

    Traditionally in Sri lanka this type of chicken curry is usually made from the fresh meat from mature birds . Also these birds are free range. That meat benefits from long cooking and a lot of seasoning. This customized recipe is better for cooking farm raised fryer chicken we find in supermarkets nowadays. Also, if you are worried about overcooking chicken, just marinade pan seer and remove the chicken. Make the sauce with curry paste and coconut milk in the same pan and add the chicken pieces during the final 15 or 20 minutes. ( Just enough time to cook it through). It will come out just as great.

    Sorry, but this is not a Sri Lankan chicken curry at all. You should remove this video. It is also called chicken black curry. It’s a mix of Indian mostly and Sri Lankan. We have only two spice powders in SL. Roasted and unroasted curry powder. You are guiding your viewers wrong. We DO NOT use cumin seeds, bay leaves, ginger garlic paste, soy sauce, ghee, coriander powder or cumin powder (which you didn’t add) in our cooking. That’s very indian. The black colour comes from a curry powder called badhapu thunapaha which is Sri Lanka’s own spice powder, it’s made of a combination of spices with different ratios, and is roasted. It is truly disappointing when foreigners cook Sri Lankan food and make it so far away from the real thing. You are teaching the wrong thing to people and guiding them wrong. When i cook indian food i do soo much of research on google and watch several videos on KZread by Indians and then make it as authentic as possible. And you having a youtube channel are teaching people the wrong thing. So disappointed. Do you research please if not stick to cooking food that you know for sure.

    I don’t believe proper SriLankan chicken curry uses dark or any soy sauce for that matter. Definitely u have changed the ingredients and tricked your way in … sorry Mr. to say but this it not the way to get the colour. At lease if you changed the ingredients, don’t call it SriLankan … and embarrass yourself…. Thank you !!! Please do more research on our cuisines..
