This is a video cooking a whole lamb. This is a nearly 37 pound lamb. Cook time was 5 hr 20 mins. This is the first time that I have cooked a whole lamb. This lamb was spit roasted over open fire. I used lemons, rosemary and oregano as seasoning together with a lot of lemons, kosher salt and pepper. I also used a little ginger. Roasted the lamb over Kingsford charcoal mostly....did add some split hickory logs over the course of the cook as well as adding hickory wood chips periodically for additional flavor.

As a Croatian Aussie, I have to say you've done this style proud :) This is how we make it for our family get togethers and it is absolutely delicious. Lamb is definitely done best cooked slowly on a spit roast. Congrats mate, you've done well!

Same here. I watched too many videos. This video is the best. Majority of videos focus on the ingredients, and they forget about the most important part, which the amount of charcoal and the very detailed ingredients.
That was amazing! The lamb looked delicious. Keep the videos coming, I'm always tuned in!

we had about 20 people over at the house the day I cooked that lamb and just about everyone ate lamb and there was enough left to feed roughly 7 or 8 more people. i hope that gives you a rough idea. that lamb was about 36 or 37 pounds and I would say I yielded a good 25 lbs of meat

Alutacon Hi Mate, Lemme first appreciate your hard work you had put up roasting the lamb and also your effort in sharing this video over the whole process. We do have a similar way of cooking here in India which is done over clay oven or clay trough (Tandoor). Instead of putting rosemary and herbs in seasoning, we smother the meat with spice mix, ginger garlic paste, raw papaya (meat tenderiser) and oil. You can try this recipe. Cheers :)
I notice the meat is directly over the coals. Have you tried leaving a gap in the middle? I am looking at doing a full lamb soon and was wondering the difference in cook time directly over vs two piles with a gap in the middle.
Hey mate, The greeks over here in Australia sprinkle the salt over the lamb then use the lemon to rub it in, after that they sprinkle dried oregano over the top and baste with salt, olive oil and oregano while it cooks. Also if you put your charcoal to the outer edges of the fire box, all the fat that drips off wont catch on fire.
Can you share the details of this machine that you used for roasting?

+for Julius M. yep! you can definitely do a pig on it. this one maxes out at 80 lbs so it can't be a big North Carolina Hog on it, but you can get you a nice size pig on here comfortably

I love to cook too and i have daydreamed about doing a whole lamb for a while...i have the spit roaster in the shed but im waiting for a specific manifestation to come to pass and that will be the celebration my family and i will partake in. By the grace of God it will be soon.

Nice job on the Charotis! Looked great with all the right spices and basting sauce. I learned from doing a 60lb pig on my Charotis, to keep the coals to a minimum and take longer to cook. You seemed a bit hot with a lot of coals. Checking temp with a Thermapen helps a great deal also. Great job! Its all about the cookn!

found it on amazon. i forget the name of the actual company that sold it (it was a third party seller). if you do an amazon search for "whole lamb spit roaster" it will come up as one of the choices

+Alutacon As a Greek man I can tell you that you did a really good job with this lamb. Next time try it without the worcestershire spray mix and add sweet paprika at the begining along with your pepper rub.

i think i paid $400 for it. forget the name of it, but if you go on Amazon and search for "whole lamb rotisserie" it will come up

Nice job brother, wish I were there! A few suggestions. 1. Use a rosemary and/or oregano branch to baste olive oil/lemon marinade onto lamb (super flavour), instead of brush. 2. Lump charcoal, not briquettes (if you can find it). 3. Keeping head on lamb would help prevent spit from slipping (but most stores don't sell them that way). Keep on BBQing and peace. (damn, vid just made me hungry)

yeah, i've looked for them with head on but you can't find them that way around here
Also try using Oak lump charcoal and/or mesquite. These briquettes just go out very fast like a spliff, and leaves some chemical residue.

thnx for watching. u r right. i should have done a taste test for this vid. we had a ton of people over and were late getting the food ready so by the time i was slicing it up i had put the camera away just trying to hurry up and get food on the table.
Sir u should taste our lamb here in South Africa that we breed in The Karoo (pronounced Kuh Roo) a semi arid or desert area the sheep graze on Karoo plants that are mostly a type of wild herb our lambs are so tender and flavourfull its hard to describe....I am spitroasting a 36 pound lamb for my birthday the 27th December.. ingredients are wild/mountain garlick this garlick look like a minature dahlia tubers it have 20times the flavor of household garlick and have a extremely nice flavour this garlick can also be used for any colds or flu ...also using rosemary,lemons,blackpepper, mint ,thyme ,and our local basting sticky marinades..for fuel and tru the entire spit roasting period I am using grapevine branches or stumps this make extremely good coals ,bcos of its hardiness the coals of grape vine is much better than coals and smoulder longer than some coals...Kind regards Ernest ...Cape Town South Africa
