Spicy Gochujang Korean Mac and Cheese!

Ingredients
450g macaroni
4 tbsp butter
4 tbsp plain flour
1 tsp mustard
500ml milk
150g red leicester, grated
150g cheddar cheese, grated
200g mozzarella cheese, roughly torn
2 tbsp gochuchang
1 spring onion, finely chopped
2 tbsp korean chilli flakes (gochugaru)
3 tbsp vegetable oil
1 tbsp sesame seeds
1 tbsp black sesame seeds
2 tbsp light soy sauce

    When you think about it, it's kinda crazy the number of different cultures involved in this dish. Italian - pasta and mozzarella English - the originator of macaroni cheese French - certain techniques / processes (at least codified in French cooking, may not be original to it) American - influence Korean - modifications

    while the gochujang can stand on its own, i think a way to improve this would be to add a ton of garlic, in true korean fashion

    "Grated cheese", yeah ;o) In France it's called "fromage râpé". My lovely wife was explaining to British friends that she put "raped cheese" in a dish. Some choked.

    Made homemade mac'n'cheese when I went to SK last year, cost me >20k won (>15 USD)... Damn food is expensive there.

    @@SchoolofWok well it did have bacon, garlic, lil chives and breacrums for the crust, but in terms of cheese it's hard to find anything else than processed burger cheese. They were decent enough 😂 Had I know for the gochujang though...

    tip to the wise; all all your cold milk to a hot pan and then bring it the the boil, stirring. In the immortal words of Chef John (Food wishes Chanel here on You Tube). "Cold milk + hot pan = smooth sauce". Believe me, (and I am a trained chef), It's true.

    Waadaya mean not healthy??? We got macaroni - made with wheat - a grain - very healthy, we got milk & cheese - dairy protein, again healthy, we got mustard - a seed - healthy!, gochujang - chili - again healthy with potassium & vitamin C...so when you think about it, mac 'n cheese is a health food! 😁😁

    There's no way that's not too much roux. Prob tastes of flower and thicker than dough.

    We actually ended up making the largest amount of cheese sauce that anyone has ever made and used a fraction of it for the actual recipe - absolutely didn't taste of flowers, or even flour for that matter! - Lee
