SPECIALTY COFFEE - (EXPLAINED) - What It Is and Why It Is So Expensive

Specialty coffee is not a new concept. It is also not just "expensive coffee". First coined by "Erna Knutsen" at a coffee conference in France back in 1978, the meaning and dream has grown astronomically since. What we know today as "specialty coffee" has far surpassed what was ever thought possible. Specialty coffee has created the Third Wave Coffee movement and to be honest, the sky is the limit going forward. With farming sustainability and ethical work practices, the specialty coffee movement is making strides in providing better opportunities and fair practices for the farmers.
I remember when I first tasted quality coffee. It completely changed my outlook and experience with the commodity. How could something so unique, so rich in flavors be considered just a commodity? This set me off on micro journeys of roasting, brew methods, and cupping which has morphed into an obsession... Some obsessions are good though, so I hear.

    My last greens were a mixture of underripe and some overripe beans. It showed after roasting, you could not see in advance. Besides all other variables, the quality of the greens is essential for me.

    Yes indeed! I think that’s why it is so important to find really good importers that visit and have close relationships with the farmers or go and speak to the farmers and witness their process in person. I think green processing is going to improve and be standardized much more efficiently over the next decade.

    Pretty accurate info. As a US citizen born in Guatemala and currently living on a Coffee growing region in the middle of Guatemala Honduras and El Salvador I can tell you that most farmers don't even break even. However, rising awareness and educating people about the importance of knowing where your coffee is coming from, its a good place to start in order to make a chance. I've been watching your videos for quite some time and I like how the quality of your content is improving from the video to the audio and everything else. Keep it up brother and let me know if you need any kind of information or anything I could do for you at origin. Hey who knows maybe even talking about how is it down here in one of your podcasts.

    First of all thanks so much for checking out my video. I was just discussing with Pablo Vasquez who lives in Guatemala as well and I think a major portion of the podcast will be coffee farmers, workers, and processors from different regions. I would love to have you on if you would be down. I have some things to get set up but I am putting a list of guests together and if you would be down I would be happy to add you to it. Once Covid gets under control I would love to get down there and visit and do some mini documentary style videos on the process, people, stories and farms. Because I agree if we can raise awareness and improve the quality of coffee to sell at a better prices hopefully the farmers can improve their quality of life and actually make some decent money.     Very nice video today, Rob. It’s a very easy-to-grasp depiction of how specialty coffee is a process from start to finish. Coffee is a social conduit not just creating engagement between people over a cup, but it’s a web of support that uphold quality and love with all the contributors to the “yum yum” factor. However sad to say is that there are still gaps somewhere in the process that creates barriers instead of genuine connections due to misinformation, snobbery and even the “standards” that may hinder self interpretation of the roasting, brewing and extraction. But it’s good to see people like you who bring in their take on things are share to those who are open minded and fun loving! Cheers and hope to do a roast along one day with you!

    Specialty Coffee is the new buzz word like Jaun Valdez the fictional coffee farmer created by Doyle Dane Bernbach ad agency in 1958 for the National Federation of Coffee Growers of Colombia. When I look at the prices of coffee it seems to be working as well old Jaun. Granted there are differences in coffee beans, but unless you do a cupping side by side, a good cup of coffee is a good cup of coffee.

    Its almost old at this point. New buzz words are fermented coffee and anaerobic coffees. It’s no different than wine. The better coffee you taste the more you start appreciating better coffee. The problem is supply and demand. The best farms do it produce much and are usually complexly bought out by single roasters. I agree marketing plays a huge role in it but in my opinion they have done a poor job marketing it. The price could still increase a lot if they ever got the marketing down. Right now high quality coffee is vey cheap compared to the commodity grade. I see that changing drastically in the next decade or so. Thanks so much for watching buddy!

    Thinking about getting into roasting and wanted to ask your opinion. Would you recommend that I buy my own roaster or go to a coffee collective to roast in the beginning? Great videos! I love your content!!

    Yes! If you have the chance to learn and use a coffee collective then definitely go that route. The risk is minimal (you are not stuck with roaster you do not like or something you decide later down the road is not for you). Also, once you roast for awhile and decide what you like and dislike about the roaster at the collective then you will make a better purchasing decision when you buy a roaster.     Nice vid Rob. Finally launching my roasting business next month and wanted to say thanks for all the info throughout the years. One of the green coffee importers I will be working with takes trips to origin at least twice a year, and I will be going later this year for the second Colombian harvest! Would be great if someone like you could tag along on one of these!

    I used storyblocks some but then I realized Canva had a ton of video footage too. I use canva for Thumbnails and stuff like that. So actually thinking of canceling Storyblocks and just using Canva. Canva has a bunch of uses.

    Why is coffee not grown in the southern US where climate and temps are conducive with those just across the border??

    You can actually grow it hear the yields just make it not worth while. Say you get 100 cherries in Honduras, the same plant may have only 5 cherries in Florida. (guestimate numbers) So it is not economical to do it in the southern states. Also, our elevation in the south is not high enough for specialty coffee.

    I think elevation is one reason and honestly the temperatures. It is pretty rare but we are getting down to 17 degrees fahrenheit tonight and lasting for a good while it appears. Coffee is really finicky. It needs the right amount of rain, perfect temperatures, altitude, and many other factors to grow (especially specialty arabica coffee). There are some other coffee species like Robusta that can grow at lower altitudes like vietnam but they are still in that tropical zone with warm weather and lots of rain. Again, you can grow it hear but it just will not compare the quantity or quality of further south and during hard freezing years you may have to replant if it got cold enough to kill the plant. Depending on the coffee plant some take up to 4-5 years to produce good in the coffee growing zones.

    @@RobPirieCedarOtaCoffee - it’s too bad this nectar of the gods is not produced locally in mass production indoor and outdoor warehouses/lighthouses where temps, light and O2 levels can be controlled just like they are in the production of fine cannabis. This would eliminate the high costs of transporting coffee from the high altitude mountains where it is grown to some warehouse in the world such as the US. It would also eliminate any import costs. In addition it would also assure consistency of product as it would be grown in a controlled environment rather than at the whim of mother nature.

    @@jaydee177 I think the biggest difference is the output. I don't remember the exact numbers but it takes a ton of coffee trees just to harvest a small amount of coffee. For example, 1 tree may offer 4-5 cups of coffee. So to meet demand they literally have to plant entire regions with coffee. It would be hard to build greenhouses big enough to make them manageable. Unlike weed where an acre of weed can meet the demand for a ton of people for a long time. I hear ya man, and honestly, I have looked into it as I live in south Louisiana. You have me curious now though. I might get a tree and plant it as an experiment to see if I can get anything from it at all. Challange excpted! haha

    Ya buddy they got them. The SCA goes deep in the weeds on their standards. I think some are a little overboard but it keeps the quality standards in check. Dude, I truly appreciate you checking out all my videos. Means the world to me. Hope they have been useful!
