As the perfect tie-in for the upcoming Easter celebration this weekend, your pals at LVIO have a special treat on our main channel today - an Easter-themed holiday episode of Paula's Las Vegas Kitchen. Join Paula for two recipes that will be perfect for a springtime brunch: Apple-Nut Coffee Cake, and a delicious and hearty Asparagus, Tomato, and Cheese Frittata. APPLE-NUT COFFEE CAKE
From Good Housekeeping Step-by-Step Cookbook, copyright 2008 by Hearst Communications, Inc. (page 395)
Prep: 30 minutes plus cooling
Bake: 45-50 minutes
Serves 18
You will need:
1 cup walnuts (about 4 oz), chopped
¼ cup packed brown sugar
1 tsp ground cinnamon
2/3 cup plus 2 ½ cups all-purpose flour
4 Tbsp plus 1 cup butter, softened
3 medium Golden Delicious apples
2 Tbsp plus 1 ½ cups granulated sugar
16 oz sour cream
1 Tbsp baking powder
2 tsp baking soda
2 tsp vanilla extract
4 large eggs
Instructions:
Prepare streusel topping: In bowl, knead walnuts, brown sugar, cinnamon, 2/3 cup flour, and 4 Tbsp butter until mixture forms large pieces.
Peel, core, and thinly slice apples. In medium bowl, toss apples with 2 Tbsp sugar. Preheat oven to 350 degrees F. Grease 14 by 10 inch roasting pan.
In large bowl, with mixer at medium speed, beat remaining 1 cup butter with remaining 1 ½ cups sugar, until light and fluffy. Add sour cream, baking powder, baking soda, vanilla, eggs, and remaining 2 ½ cups flour.
Beat mixture at low speed until blended, occasionally scraping bowl. Increase speed to medium; beat 1 minute. Spread batter in pan to corners. Arrange apple slices on top, to edge of pan (otherwise batter will bake up over apples).
Crumble streusel topping over apple layer. Bake 45-50 minutes, until cake pulls away from sides of pan. Cool in pan on wire rack 10 minutes to serve warm; or, cool to serve later.

ASPARAGUS, TOMATO, AND CHEESE FRITTATA

Prep: 30 minutes
Cook: 20 minutes
Serves 4
You will need:
12 ounces asparagus
1 medium onion
1 medium tomato
4 oz Jarlsberg or Swiss cheese
2 Tbsp butter
8 large eggs
½ tsp dried marjoram
¼ tsp salt
Instructions:
Bend base of asparagus stalks; ends will break off where stalks are tough. Discard ends; trim scales if stalks are gritty. Cut stalks diagonally into 2-inch pieces.
Thinly slice onion. Cut tomato into 8 wedges; remove seeds. Shred Jarlsberg cheese (you should have about 1 cup).
In nonstock oven-safe 10-inch skillet, melt butter over medium heat. Add asparagus and onion; cook 10 minutes, or until asparagus is tender-crisp.
Preheat broiler. In medium bowl, with fork, beat eggs, marjoram, salt, half of shredded cheese, and ¼ cup water until blended.
Pour egg mixture over vegetables in skillet; arrange tomato wedges on top. Cover and cook over medium heat 10 minutes, or until set. Sprinkle with remaining cheese.
Broil frittata at closest position to heat source 1 minute, or until cheese is bubbly. Loosen frittata and slide onto platter; cut into wedges. Serve hot or at room temperature.

Actually we did, once upon a time - we kind of dreamed of having a muffin shop or something. But, it would tie you down a LOT to do that, so we thought better of it.

No, not accidentally - I did it on purpose. That’s why we labeled it a “special edition”. 😊 I did it at Thanksgiving too, put a kitchen episode on our main channel…they get more traction here.
