Spanakopita - the iconic Greek pie with a Spinach and Feta filling, with layers upon layers of buttery flaky filo pastry.     Nice recipe my dear but the original Greek Spanakopita we never add, garlic , lemon, yogurt, and spices. Only salt and pepper. The ingredients are spinach at list 1kg , 1/2 a bunch of fresh dill, 5- 6 fresh onions, 2 leaks, ( optional) 500 gr feta cheese, kafalotiri 1 or 2 handfuls (optional) and 2 eggs. And a round of olive oil, not much. Be careful of the salt because the cheese might be salty. There are many ways to prepare your greens for the pie...others they put them at the pan and cook them a little bit , others they just add only the spinach in boiled water just for 5 min ...and then drain it well, and others they add salt and start rub until withered. Then you add it in a bowl ,chop chop all the rest ingredients stir together and put it in Phyllo dough. Also you can use puff Pastry to tell you the truth I like it more. Tip spinach tend to remove liquid so no matter how you prepare it make sure that you drain it realy good.

    I used frozen spinach, thawed and well squeezed, and frozen coriander. The mint, dill and sage were all dried. All very good, in the freezer or cupboard and not expensive. Was delicious for lunch with salad or, when lockdown ends, great party food. Xx

    My only question is, Does the wringing the spinach stain the towel, or does it wash out? Seriously, does it? I'd hate to mess up one of my good kitchen towels, so I'll have to buy a green one. 🤣😂

    Traditionally the spinach is cooked with the onions butter etc etc then you strain it after cooking it to release any additional moisture. I think if you do it the way shown in the video you're going to get a very soggy end result.
