    I've just read your article, "Weak dough management" I use home milled wholemeal flours and weaker water milled white flours and I decided to check my practice and refresh my knowledge. Your article is superb and I have never seen another article which brings all of that information together in one place. Than you!

    Thank you for the demonstration. My Gold Medal Bread Flour looks just like you bag of bread flour but it says it's only 3 grams protein out of a 30 gram serving size, which means it's only 10% protein, correct?

    Divide the amount of water by the amount of flour by weight.
