Sourdough Bread | Basics with Babish (feat. Joshua Weissman)
Ойын-сауық
This week, Joshua Weissman travels alllllll the way to the big apple, just to show me how to make bread! I mean, I'm sure he did other things while he was in town. Watch him recreate the famous Levain chocolate chip cookie here: • Recreating Levain Choc...

When I've baked sourdough before I was told to spray a little bit of water on top of the loaf before putting the lid on to help create steam. Is this loaf hydrated enough to not need that? Was it a prank and not a necessary step to spray water?

His skin was damp with perspiration. He did not know if it was the heat from the oven or... something else. He tried his best to ignore the thought, to forget why he was so bothered. Something he hadn’t been aware of was blossoming, and its existence shook him to the core. He washed his hands as he cleaned off the sticky residue that covered him like a stain, marking him for what he had participated in. He breathed in deep, exhaling slowly as he attempted to collect himself before going back into the room where it happened. He did not know how he was going to face the camera, but he knew that he could not keep the group waiting. He dabbed his face with the towel, and walked back out. There he was, laying there, his silky curves facing him. Andrew could not look at him without the feeling swelling in him. He gulped loudly, then stepped forward. “I can do this, just keep your composure,” he told himself. He looked upon the table he lay, and came to terms with what he had done. He placed his hands on him, and with a simple motion, he began kneading. Relaxing, he looked up, and with a newfound composure, he admitted the awful truth to himself: he was hungry, and he had eaten some of the dough.

Josh teaching Andrew is probably the best tutorial I could hope for. Andrew makes very small but significant mistakes and is honest about them, and Josh gently corrects and brings it to the level necessary to make it almost perfect. A very interesting dynamic, and a very helpful look into dough.
Baked this bread earlier this evening. After killing my starter once and watching this video about 100 times I did it and it was delicious! Well worth the hours of proofing, fermenting, stretching, watching, waiting. So proud of my little loaves! If you're thinking it's too complicated or don't have all the necessary tools, I stored my dough in big tupperware containers instead of those little baskets and scored them with a plain old sharp knife. 10/10 will bake again (if I can keep my starter alive)

My two favorite KZread Kitchen Gods, together.... making greatness.
i made this sourdough with my own starter that I made from scratch for the first time these past two days. I didn’t score deeply enough, so they came out looking a bit silly, but the texture and taste were still intact. Easily the best loaves of bread I’ve ever made. A delightful open crumb with a soft texture and a crunchy crust. I baked mine on a pizza stone (i don’t have a dutch oven) so the browning time was a bit different. Still a great result. I was initially a bit hesitant on sourdough bread because I don’t really like the “sour” flavor. But this had a nice, light yet complex flavor.
