100g bubbly wholemeal rye flour starter (50% water, 50% flour)
350g room temperature water
450g flour (300g bread flour, 100g white spelt flour, 50g wholemeal flour) you can use any combination of flours, but try to use mostly bread flour for best results
8g salt
