SOUR CREAM BLUEBERRY STREUSEL MUFFINS
{makes 12 muffins}
1 1/2 cups all-purpose flour
3/4 cup white sugar
1/2 teaspoon salt
2 teaspoons baking powder
1/3 cup vegetable oil
1 large egg, room temperature
1/3 cup milk
1 teaspoon vanilla
1/3 cup sour cream
1 cup fresh blueberries
for the topping
1/2 cup white sugar
1/3 cup all-purpose flour
1 1/2 teaspoons ground cinnamon
1/8 teaspoon salt
1/4 cup unsalted butter, cubed and soft
Preheat oven to 400 degrees. Grease muffins cups with Baker's Joy or line with baking papers.
To make the streusel topping, mix together all the ingredients, mashing/incorporating with a dinner fork or pastry cutter, and set aside.
For muffins, whisk together the flour, sugar, salt, and baking powder in a large mixing bowl. Make a well in the middle of the dry ingredients, and stir in oil, milk, and egg. Add vanilla and sour cream. Stir with a wood spoon. Fold in blueberries. Using an ice cream scoop, fill muffin cups just below the top, and sprinkle - I mean, heap on - the crumb topping mixture! Use all of the crumb topping! Trust me!
Bake for 20 minutes, then check them in 1-minute intervals until they're done. Don't overbake them. Cool completely in pan or your tops will separate from your bottoms. And nobody needs to be topless - or bottomless, for that matter. Gently run a knife around the edges and carefully lift out of the tin. Replace any crumbly streusel topping that falls off. Or eat it. I prefer the latter. Serve with butter, naturally!

A couple of things. 1st, I want to thank you for this recipe, it turned out fabulous. Thank you so much for sharing. 2nd, thank you for posting the recipe in the description box. I constantly make a variety of recipes from KZread. I don’t have time to chase down a website and look through many things that do not interest me. God bless all there. Happy cooking and baking.
A tip to try and make your papers stay in place whilst you add them with filling is to pre spray your pans lightly with oil, and the baking paper will stick to the oil. That way your not doing the juggling act to hold the papers down whilst trying to fill them with batter. Great tutorial and recipe. Can't wait to try them out.
Absolutely loved these muffins. Best muffins ever! Thank you for sharing.
I will try this recipe but let me appraise the bracelets .... so beautiful

Enriqueta Ortega Sour cream in muffins makes the muffins taste amazing. Soft, fluffy and melt in the mouth. Sour cream also makes pancakes wonderful.
FYI - To have the homemade parchment muffin liners stand on there own before filling. Use the bottom (turn upside down) of the muffin tin to make your mold and shape the parchment paper around the bottom. Then put in the muffin tin and fill. Enjoy!!🙂
Do you have a blog/website I can get this recipe from! 😘💕 I tried these muffins and they are DELICIOUS 😋

Cinnamon is very beneficial to the body.
Can I substitute oil with butter? If yes, would the measurement be the same?
I don't have an ice cream scooper. So what size scoop would that be? And even better how much of a cup would that be 1/3? Or 1/4? Or 1/2? And I can't find your website. Only the you tube channel.
How about freezing?
oh unfortunately you did not open slice your muffin.. i am looking for a soft, light muffin.. but could you just please tell me if it is so soft and light? thank you :)
So excited to try these! I'm a butter gal myself so I'm curious can I replace the oil with melted butter?

I have em in the oven rn...& i replaced the butter for oil and everything is going PERFECTLY i have about 8 mins left
Jeb Trillio, did you ever make these?
It would be helpful if you told the measurements on the video. I didn’t find the website helpful.
After 20 minutes they are still not browned. Are they supposed to be? I am giving them another five minutes and will check. I had to use frozen blueberries. Could that be the culprit?

Keep talking. People with problems shouldn't visit these sites. Just be yourself.
Sorry I don’t know why the measurements aren’t here..why website?
Was a good preparation, sure test unbelievable, but she forgot to open up one muffin to show us how look inside
Can u pls convert your 1/4 cup of butter into gram measurements.

1 stick butter is 1/2 cup butter :) you can just simply cut your 1 stick into half. how do i know this? because i measure this many years ago :) i guess this reply is now too late hehehe

From a different recipe - 3/4 C. butter is 6 oz. / 170g. SO, I guess 1/4 C. would be 2 oz. / about 56-57 g ??? I'm American :-)
The topping was way toooo sweet and stayed gooey - not a recipe I will repeat
Nice recipe but store-bought paper muffin cups for a dollar are cheap, time saving and easier.
