That’s usually because there’s a speed cap in quickstep sections, it’s most noticeable in unleashed because you have a speedometer and also when the camera pans to show the chasers or interceptor you can visibly see sonic’s legs slow down dramatically.

Perhaps Sonic should hit a collision that make the bomb warning signs move with him using platforms hidden under the stage that are attached to those signs.
