LEARN HOW TO MAKE DELICIOUS SOFT PARATHA AT HOME!
Called buss up shot roti in Trinidad, This paratha recipe is multilayered and delicious. I will teach you how to make this in detail from the kneading to the cooking. It's a recipe you and your family will love.

Trinidad Paratha Roti (Buss up Shot)
Serves 6-8
Ingredients
For kneading
2 cups organic unbleached all purpose flour
1 teaspoons aluminum free baking powder
½ teaspoons salt
1 teaspoon raw brown sugar
3/4 cups lukewarm water
1 tablespoon vegetable oil
For filling the dough
4 tablespoons clarified butter (ghee) or organic butter (or coconut oil for vegan option)
flour for dusting
To cook the paratha:
1/4 cup vegetable oil
STEP 1: Knead flour
1. In a large bowl, combine the flour, baking powder, salt and sugar.
2. Gradually add water to make a shaggy soft dough.
3. Rub 1 tablespoon oil over dough. Cover with a cloth and let rest for 15-30 minutes.
STEP 2: Filling and wrapping paratha
1. Divide the dough into 3 equal pieces.
2. Press each dough into a circle using fingers or rolling pin. Using your fingers (or the bottom of a spoon) rub the surface of the dough with clarified butter.
3. Sprinkle with flour. Cut dough downwards from middle of the top edge (12 o'clock) to the center of the dough.
4. Roll clockwise into a cone.
5. Take the end of the dough and tuck it under the cone.
6. Push the tip of the cone downwards into the dough.
7. Cover and let it rest for 30 minutes.
STEP 3: Cooking the paratha
1. When ready to cook the roti, heat tawa, dry cast-iron skillet or griddle over medium heat until hot.
2. Working with one ball of dough at a time (keep the remaining dough covered) and using just enough flour to prevent sticking to counter and rolling pin, press dough into a small flat circle (about 4 inches).
3. Using the rolling pin, roll the dough. Flip, rotate and roll until it becomes a thin, even 10 inch round, making sure that the edges are not thick. If you can't make it round, don't worry, it tastes just as good.
4. Pick up the dough, place it on the palm of your hand and lay it on the tawa by quickly flipping your hand over the tawa.
5. Drizzle or brush about 1/2 tablespoon oil over the surface of the roti. Flip.
6. Drizzle or brush oil over the other side. Flip.
7. Cook for a few seconds more, spinning roti slowly in a clockwise direction to allow the oil to spread and the roti to cook evenly, about 15 seconds.
8. Turn and repeat on the other side, cook another 15 seconds.
9. When roti is fully cooked, use a wooden spatula to beat the roti gently, accumulating the edges toward the center (start at the top and work your way down), until the layers separate.
10. Remove the roti from the tawa and wrap the roti immediately in a clean, dry cloth.
11. Repeat rolling out and cooking the remaining dough, stacking and wrapping the finished roti in the cloth. Once they are all cooked, let them rest in the cloth for 10-15 minutes before serving. During this time, they will steam themselves, becoming soft and pliable.
Storing
Well-wrapped roti keep in the freezer up to a month. Thaw overnight in the refrigerator and reheat before using.

    For anyone watching this I just made this recipe, its my first time EVER making these and it came out exactly like she said it would, and they were beyond delicious, I've ate them at restaurants before and this was by far the most delicious thing I've had, please try it. I was scared mine wouldn't turn out like hers but it looked the exact same way just follow her steps just like she said to do it I made mines with butter and oil, I'm gonna try it with coconut oil next time

    Finally, I can make good parathas at home, all thanks to you. Since I live alone, I made 6 of these and put them in the freezer. The next day, I took one out and re-heated on a tawa. It still tasted really good. That means I am not buying store bought parathas ever again. Thank you.

    Maybe they are Guyanese. The Guyanese usually clap the paratha roti and the texture is heavier and flaky; While from what I have had in Trinidad, it is exactly as in the video.

    I have to admit, I didn’t realize how much Trinidad culture has impacted me. I lived in Trinidad for many years and underestimated how much this food means to me. Now living here in the USA, I crave the food. I never tried making this before as it was always readily available. Now after watching like 25 times and making it now over 40 time I’m a pro.. thank you so much Ria. When I go to Trinidad and they ask me, “ hey you want roti ?”, I decline and simply say, I learned from Ria! Oh and I followed your recipe for parasad as well as Calloou with spinach. Thank you!!

    I’m Jamaican and my brother’s wife is Trini. Her mom would come over and make fry bake and she would often make channa, callaloo and a bunch of other treats. Anyway, I got to really really like buss up shut but I never got it anywhere quite like the authentic thing. I’ve tried about 3 other recipes and everytime I make this one, it’s a hit! Thank you so much! I use the recipe from your blog because I’m better at following written instructions and I love how detailed you are. Great job!

    I'd been checking out various Caribbean recipes lately- but this caught my eye and instantly made me think of having Malay roti canai: a dish I've had a few memorable times, yet otherwise out of reach. When I followed these clear, simple instructions, the result was a flakey, buttery, chewy perfection. I actually cried. I know it's kind of dumb to cry over something that millions of people eat everyday, but for me, it represents all the places I can't go, the money I don't have, the people who couldn't be bothered. This roti has long been my "impossible" food, and here it it- amazingly simple, ready for whatever curry. I didn't even pay attention to the measurements, just the technique and the rest-times, which are well explained. These days It's very telling when most of the reviews say "I made this and it was perfect".

    Hi! I have been making roti the wrong way for years! I thought the recipe that I have been using is the best! Boy, was I wrong! I just made this. I used butter in the dough and cooked them with canola oil. They're very authentic! I did not have the flat sticks that you used to scrunch the roti up. I improvised and use the tongs. They worked! My husband had four in one sitting! Thank you for posting the recipe!

    Alot of Caribbean people came from Africa.Our ancestors were taken from Africa via the trans-Atlantic slave trade to the Caribbean Islands between the 15th and 19th centuries. So yes there are alot of connections look into it 😊

    I made this today following the step by step guide from Ria and MY GOODNESSS GIRRRRLLLL IT WORKED!!! Soooo glad I didn’t have to use milk because with the Coronavirus there’s barely any milk in the shops.     Hi Ria, this is how I usually make my Paratha roti. I like watching all cooking videos, to see the different ways of cooking the same things, and sometimes I even learn a couple things myself!     I just made this with the butter + veg oil. It works!!!! Yeah finally made bust up roti. This method is so much easier. Thank you 😊

    Angela Constant what were your measurements? I am not good at eye balling. Tried a different recipe before which said two teaspoons baking soda and I could taste it . Didn't enjoy and they came out hard and less flaky. Thanks

    I made this recipe tonight and it came out amazing! I used butter to fill mine. I did not have a tawa and used a frying pan. Hands down super easy recipe. It made 6 rotis

    Wowwww I actually feel like I can do this now! Makes it less intimidating. I’m going to use a combination of vegan butter and coconut oil. I’ll let you know how it turns out. Thanks Ria! Just maybe my boyfriend will marry me after all😄

    Great tutorial! Sometimes I use ghee and other times oil mixed in butter. End result....I have found using ghee makes the roti softer. That's just my opinion

    I was born in Trini and have eaten roti and buss up shut so many times, but always "left making it to the professionals". This incredible cook and instructor has certainly taken the mystery out of the process. I am going to try making it myself. Thanks for sharing.
