Makes 1 each 9x13 inch focaccia
Serves 3-4 people
Dough 1:26
1 1/2 cups plus 2 Tablespoons water ( 13 fl oz or 370 g )
1 teaspoons sugar ( 4 g )
3 cups all purpose flour ( 450 g )
1 teaspoon salt ( 3 g )
1/4 teaspoon instant yeast ( 1 g )
2 Tablespoons olive oil ( 25 g )
*this is an 80% hydration dough
*For those of you who chose to do the no-knead version, after mixing the dough let it rest for 30 mins on the countertop at room temp then skip ahead to 4:38
Brine 6:31
1.5 Tablespoons olive oil
3 Tablespoons water
1 teaspoon salt
1/2 teaspoon sugar
Black pepper, optional
1 Tablespoon roughly chopped rosemary
1Tablespoon roughly chopped garlic
Other toppings:
