hello yking, thanks for the only snails plate in all chinese restaurants- do not see how to buy the black bean in the list - but fish sauce is usually not needed for more vinegar or savory flavor. a fave place in nyc to eat this is hop kee (again) - some people think it is the conch but this is also. thank you - my pup at home does wok this also sometimes - we lose many toothpicks that nite for dinner. elle for snail food
