Andy visits NYC bar Employee's Only where bartenders still come up the ranks in an apprentice system and where bartender Steve Schneider has fashioned his own fancy mallet with his face on it to smash ice old-school style. Steve walks Andy through how to make one of their most popular drinks, the Ready Fire Aim. The drink is a combination of mezcal, homemade peppery honey-pineapple syrup, fresh pineapple juice, lime juice, hell fire bitters, and some pink peppercorn garnish. If you want something fruity with a bit more of a bite, this multi-layered flavor bomb is for you!

That would be one hell of a tasty drink!
Ready Fire Aim Homemade Pineapple Syrup: Honey* & hot water (2 parts honey to 1 hot water); pineapple crushed with pink peppercorns. 1 oz syrup 3/4 oz pineapple juice 1/2 oz lime juice 3 dashes hellfire bitters 1 3/4 mezcal Shake. Serve up in a coupe glass. Top with a few crushed peppercorns. Enjoy. This tastes amazing: smokey, sweet, sour and spicy. *I used blue agave nectar to keep it vegan

First professional bartender I’ve seen not using a jigger for dosing. Thought for a moment I was the only one 😂Pretty useful skill in my opinion, especially in busy bar settings ✌🏻

Regarding the syrup, how long will it stay good for in the fridge? can maybe add a little vodka to it, to kill the bacteria?

It's one of the best cocktail bars in the world. They use a free pouring "high to the eye" technique. Their apprenticeship program and years of training ensure accuracy in their principle bartenders.
