Continuation of last weeks epic fishing trip. Smoking this huge lingcod head plus the roe. I also made pate out of the lingcod liver. Put it all in a banh mi!

@@OutdoorChefLife Yeah, me neither. I'm also not a big fan of fish eggs. It's all personal taste. The smoked cheek meat and collar looked delicious.
This is the closest I've seen Joselyn not liking a meal. As a guy that's tried to cook roe, I never believe Taku when he says mmm that's really good 😆

Fisherman's/hunters taste buds. Stuff taste good when you catch it yourself combine that with his heritage where they eat things like this and he just has a different palate than a lot of us but you know his culinary skills are on point.

@@kjb21161 That chili oil is pretty average when it come to your vareity of chili oil out there, I think there's better brand honestly or recipe out there, and the pickle kelp in which he seem to like, I wasn't a big fan of.

Is it just me that noticed Jocelyn didn't partake in the beer? I don't think I've ever seen that. Jocelyn, are you feeling under the weather?
I was screaming at the screen, "don't forget the daikon and carrots!" while you were assembling it. Glad Jocelyn swooped in to save the day. Eating Bánh mì without the pickled stuff would've been criminal. Also, I would've put in kewpie in there as well.
Poor Joselyn, she has to taste everything you cook, whether it is delicious or not. Please be gentle and nice to her. God bless you both. ♥♥♥

Taku & Jocelyn, your videos have been fire lately. I feel like you’ve been a lot more comfortable in front of the camera and talking to the audience. Makes me feel like I’m actually there on your awesome adventures. Also, your vids really highlight your guys’ personalities, which we all grew to love. This is exactly why I follow you. Don't get me wrong, I love your salmon/halibut/whatever fillets and more "normal" cooking but the off the cuff more wild recipes are amazing. Love it man. I'll have to keep the heads next time we hook up with a lingcod. Great video Taku

Right on . But we better shut up ( me) as keep it to those who in da know. Octopus is cheap too from Korea and marinated and quick grill JC heaven. I want to catch one of those giant red ones from PNW but shit you need a spotter as they can take you. Nice sharp knife and carve em to a core body . Legs grow back! Sustainable. Japanese have the most amazing cuisine ideas. In the mood for some fugu and champagne and sushi rice like now. Or let's make that warm sake. You see those todie puffers you can eat in west Florida? Not toxic and skin the drum in 10 seconds. I'm down! Red snapper from Kiribati. Fat reds . Ok time for dinner

Jocelyn nail it, with the roe and liver pate combo is overpowering. I think Taku has a very refine or advance taste bud that take time to aquire for your casual non-fish or seafood eater. I eat shrimp, fish if cook certain way, muscle, clams, etc. I do not like pickle kelp which taku seem to be a big fan of 😅.

With the initial high temperature cycle you may have put the head in to early. Pellet smokers will typically start out really high and then come down to temp for that lower smoke temp. Good stuff man thanks for the content.

Dude this was awesome the way you prepared the this meal with all those different parts. Really amazing stuff Taku. It was like charcuterie of the sea. Such a good idea with the pate. I used to make a mean chicken & duck liver mousse at my last job. I’m curious to try with fish liver now!!

The best part is the head, and here in Malaysia we have huge snapper head called "Fish head" curry its amazing but all the white folks get disgusted.

I grew up in SF eating Golden Eye rockfish heads. They were cheap back in the day and meaty and tasty.

after I landed a nice calico in the deep kelp off Carpinteria a couple years ago, a 15' white came up and circled my kayak. she swam off towards a commercial dive boat a couple hundred yards away and I scooted into some thick kelp...no other calico tasted as good as that one!!!

Greetings from Thornton Colorado! I could totally get behind that sandwich. I like different and this certainly is. I am white and grew up with mostly Asian families in California and have eaten things I never thought I would. I learned how to eat…..really eat head to tail. Big fan. First time commenter. Have you done any videos showing how to remove the gills? After one you did a long time ago cooking a ling head on a campfire I’ve tried it a few times, and I really struggle taking the gills off. Really appreciate your videos. It really has been inspiring, on top of just being very fun to watch.
Nothing better than a !lingcod. Great catch on the light rod just make sure not to try to take out the hook by hand.

Reminds me of ankimo (monkfish liver). With a small dab of momiji-oroshi on top, it is one of the best serving IMHO, but not for the uninitiated or the faint-hearted. Excellent with cold unfiltered Nigori, fuggedaboutit.
