    I love your videos! My family in Texas bought a house up here in Maine, they are fixing up an old farmhouse, and have a giant front deck right above the ocean. Can’t wait for this summer.     @@TexasStyleCuisine Traditional English mostly, with the influences from Spanish, American, European. Theres the devils breakfast ones of Chorizo, bratwurst, boudin and dreaded of all, vegan. Mostly lamb and beef country here. 😊❤

    Deer/pork J&C sausage should be recognized as a food group. I don't have the processing equipment but would love to try this sometime - thanks for the instruction. Have you ever tried Fischer's (Muenster TX)? I don't have their recipe obviously, but I had them process a deer this season - top shelf sausage!

    So the barrell cooker will get to 120? That's been my biggest issue....getting a cold smoke type setting.

    Yes set it up will very little fuel ie. charcoal/wood. You can use cooking pellets also. I have used my offset before and I have used my Outlaw Smoker pellet grill, it will run cooler than some other pellet grills

    MJ I know some people that use whole jalapenos or atleast big chuncks. I like a small piece where it spreads through the sausage. But I did not add enough jalapeno in this recipe. If I would have left in the seeds there may have been enough. Have you used whole jalapenos before?

    I used whole jalapeños but I had dried them first, I crushed them before we added them to the mix. Just stemmed them first. They were really good, I should of increased the amount by half though.

    you may have over heated the sausage or let it dry to long before before cooking. Also make sure you soak the casings before stuffing them. A dry csing will stick.

    If you mix the water and seasoning together before adding it to the meat it gets distributed so much better
