New Orleans native Charlie Andrews demonstrates how to make Smoked sausage smothered in creole gravy over rice. It's a simple dish that's affordable. You can also make the dish stretch by adding chicken, shrimp or ground beef to it. It also can serve a few people. You can get about 8 to 10 servings from this dish. I also add about a teaspoon of baking soda to any tomato base im cooking with. It neutralizes all of the acid and youre guaranteed to not have heartburn. Learned this trick from my grandma and my daddy. It also doesnt change or alter the taste.

As is characteristic of my comments, it’s time for some south Louisiana food history… Believe it or not, although this dish is common among many people in south Louisiana using smoked sausage, it derives from an older New Orleans area dish called chaurice à la créole in old New Orleans French, it can be said in an english-style way as chaurice creole. Chaurice (show-reese) is the old New Orleans French term for what is known today in New Orleans as “hot sausage” (known as hot link in southwest Louisiana)(chaurice is the Louisiana French term for the chorizo brought to Louisiana by Spaniards). So basically, the origin of this dish is a “hot sausage creole” made similarly in the manner of shrimp creole (chevrettes á la créole in old New Orleans French) and this dish in the video. So basically a hot sausage creole. You should try to make it with hot sausage instead of smoked sausage and you’ll have the original dish (you must drain off the grease from the hot sausage after frying it because there will be plenty). This dish is of Spanish origin but with French influence. All creoles (dishes smothered in tomato gravy) trace originally to Spain and filter down to south Louisiana and the Spanish Caribbean (Cuba, Puerto Rico, Dominican Republic) as dishes like shrimp creole are commonplace in these Caribbean nations just as it is in south Louisiana.

Smoked sausage replaced hot sausage over the years for many folks because of the popularity of smoked sausage. But the hot sausage version is 🔥 and is the original. I made the hot sausage version and it comes out so tasty. I used the link form of hot sausage and cut them into 2 inch pieces (cuz I like larger pieces). I guess you could use patties or squeeze the meat out of the links if you wanted to make it like meatballs or fry it in little bits like how you do with sautéed ground meat, but I never did it that way. Whichever way, it’s important to either fry it or bake it (poke holes in the top with a knife) to get the grease out first before adding to the gravy because as you already know, hot sausage makes a lot of grease. I looked at an old New Orleans recipe for hot sausage creole from 123 years ago (it’s old New Orleans French name was “chaurice à la sauce créole”, as chaurice wasn’t yet called hot sausage at that point in time, it was called chaurice) and they used hot sausage in link form so the real original way is to use it in link form. Mr Andrews wanted to ask if you have heard about another dish my motherlaw used to make it was called ground meat soup it had everything that a stew has in it but it was a soup it had sweet corn in it too if you know of it I live to see recipe
