Direct over the coals grilling using a meat hook to smoke a whole chicken for our pulled Nashville Hot chicken sandwiches following Malcolm Reed's Nashville Hot method on chicken thighs on my Kamado Joe Classic 3 turned out better than I could have imagined.
Using the meat hook allows us to run our Kamado style grill like a UDS / Barrel smoker where we get the smoke and flavour of our drippings hitting a live fire which enhances the smoke profile and crispy chicken skin that will be mixed in our shredded pulled chicken Nashville hot sandwich

    Love the idea of hanging stuff. I have seen some companies making hanging racks for the weber kettle, so maybe someone will make one for the Joe too. BTW, you should do a montage/time lapse of your rear neighbors remodeling!

    My experience with temps in the dome is similar. I have the Jr. and my calibrated dome thermometer consistently reads higher than my ThermoWorks Smoke probe affixed to the grill grate with the deflector plate installed.

    I often get close to 50°f difference in temperature between the meater probe and the dome thermometer (which I have calibrated recently). It's a surprising amount of difference! Also using a Joe jr.

    Where do you find this big block where the blocks are actually big? I've purchased from Amazon and Costco, and usually quite a bit of the bag is a lot of small pieces and medium sized chunks

    its never happened to me on the 30lbs bags (fingers crossed). Amazon and Costco are notorious for the different bags based on online comments about it. Try a dealer or KJ for the good stuff

    the joetisserie can hold more... the big joe for example has two sets of prongs so you can do a full pack of chicken shawarma and al pastor on the other set and feed a large group. the joetisserie gives you more flexibility to rake the coals around to control doneness and fire different spots, so for that i love it.... but for $10 or whatever these hooks cost me its a great way to play with some direct over the coals cooking

    I tried this cook. Its was fun and delicious! However, when I first lowered the bird with the 10" hook, the breast were on the coals. To fix that, I had to truss the bird tightly around the breast and back to the legs.

    @@SmokingDadBBQ I don't know but the bird also rubbed the back of the grill when hanging and the dome was open. I had my wife lower the dome while I held the bird away from the grill sides. Other than those minor 2 issues, it was a great cook.

    That looks delicious, but Nashville hot chicken is...fried chicken. Not only is it fried, it uses little to no sauce. Most / all of the flavor comes from seasoning in the batter. You should be be able to pick up the fried patty without getting your fingers (very) dirty. This is pulled buffalo-ish spicy chicken. There's nothing wrong with that, that stuff is delish, but it ant Nash-Hot

    i agree, but Malcom Reed got away with doing chicken thighs (not fried) thought i could try a non fried version (also pulled, not traditional)

    @@SmokingDadBBQ yeah, but Nashville is oil based, That way, when it is poured over breaded chicken, it won't make the chicken soggy. Your recipe calls for 8 oz of hot sauce, which is water based. It is a bit of a fusion between the two, but I'm the end because of the high water content I have a hard time buying into the camp of it being Nashville Hot.
