I smoked 2 cream cheese bricks, this morning on my Kamado pellet Joe. I used everthing but the bagel, and and a sweet bbq rub. They are delicious.

I do everything bagel seasoning with hot pepper jelly. It’s soooo good.

I find scoring after seasoning gets the flavor deep in cream cheese! Great video.

I first smoked cream cheese back in the mid 1980s in a home made, water smoker, made from a galvanized trash can (the idea for the smoker came from an episode of the Frugal Gourmet). After our success the first time using the smoker for a rack of ribs, we searched for anything we could try smoking and found a block of Philly cream cheese in the fridge and tossed it in. It was an instant success and ever since, we smoke cream cheese almost every time we fire up our smoker. We long since graduated from the trashcan smoker, but we still do smoked cream cheese regularly, 40 years later. If you haven't tried smoking cream cheese, you owe it to yourself to try it.

The thing is a tank. Nothing better than griddle breakfast and smash burgers along with a big tri tip, pork tenderloin, ect. Fantastic grill. Thank you!!!!! Thanks David. This is one the kids ask for over and over, and one of them doesn’t like cream cheese! Doesn’t make sense to me, but we think it’s a winner.

Great video! Love that you included the kids.. I smoke all time and currently experimenting with cream cheese and cold smoking block cheese with a smoke tube..it's delicious! Question: what's the advantage if any with using your cast iron as opposed to a foil bed ? Thx
Fun Fact: I tried both the savory and the sweet rubs on almonds! I used 1 tsp of neutral oil (peanut or avocado) per cup of (raw) almonds and 2 Tbsp of rub per cup of almonds. Smoked them for 30-45 minutes at 275*-300* in the kamado with apple wood. Came out amazing!

Thanks! The kids love being in the videos when they can, and I like showing what the kids like and what they don't since most of the time i'm cooking for a range of ages when company's coming.

Freeze it for about 1/2 hr for a firmer cheese to work with, and more smoke

Can I substitute the turbinado sugar with regular white sugar

I don't generally put anything in the cast iron before I cook this, I just put the pan on a heat resistant trivet and use the pan for serving.

Does it matter if you score the cheese before or after applying the rub?

I usually do it before, but it works both ways.
Where do you get your captain rodneys? The only place I can find it is Amazon. I would prefer to shop local

Believe it or not, we get ours at Jungle Jim’s whenever we visit family in Cincinnati or buy online. Haven’t found a local source here in Indianapolis yet.
Can I do this in the oven as well? Or we’ll you not get that smoked flavor?

You can certainly do this in the oven as well, but it won't have the smokey flavor that you get with a smoker. If you have a Gas Grill outside, you can always pick up a pellet tube for some smoke and cook it on your gas grill. That would still give you the smoke flavor.
Who woulda thunk it... lol! Looks like it might be a nice dip with some chili poured around it and some nice tortilla dip chips.
they do a lot better with cold smoking
No oil on the bottom of the cast iron?? I'd like to try this on my Silverback

I don’t put anything on the bottom of the cast iron, just put the rub on the cheese, drop it in a room temperature cast iron pan and slide it on the grill.
