    How many pounds of sliced beef can this smoker accommodate? On my pellet grill I'm maxing out at 3 lbs of Eye of Round sliced at 4 on a professional slicer. For a number of reasons I want to add this Big Chief so that I can make larger batches of jerky at a time. Hoping that between it and my pellet grill I can get 7-8 lbs? Ultimately I need to do 10 lbs batches at a time.

    The manufacturer has rated this smoker to hold 50 pounds of meat, but that might be a stretch. However, it has 5 racks for a total of 845sqr inches with 3 inch spacing. You will want to rotate the racks around for even cooking. The specs can be found in my written review, the link is in the video description.

    One other question: Just how long are you smoking that jerky for and how thick was it cut? My batches on my pellet grill are sliced at about 4 on a professional slicer and smoked at 165 averages 1.5-2.5 hours depending upon where it is on the grill and if upper or lower rack. It looks like that Big Chief is taking MANY hours to smoke it?

    I usually hand-cut my jerky, but I have a garage sale home meat slicer that works well for small pieces. I am not sure, but I thought 4 was 1/4 inch, and that is close to my cut thickness. I run the big chief for about 8 hours to do jerky. It cooks at 165 degrees. Also, check out my Masterbuilt 140B playlist. I think there is a jerky video in there. The 140B has an adjustable temperature to 275degrees.

    I typically use the lowest temperature just to finish drying the jerky. My oven goes down to 170 degrees, but the big chief smoker will run about 165 without the insulation blanket. I think the jerky was dry enough that I was able to skip the oven step for this video. Thank you for watching.

    How long do you need wood chips smoking for to make tasty jerky?

    I will go with 2 or 3 pans for strong wood like mesquite. For mild wood like alder or fruit, 4 pans are a good target. Each pan smokes for about 45 minutes, but I will leave them in a bit extra to burn up completely... I try not to over smoke, so error under, because bitter smoked food is not good.
