We are very excited about receiving our new Little Chief Electric Smoker to put out some amazing Smoked Beef Jerky. Come along as we give it its first smoke. Smokehouse Products have been putting out these smokes since 1968... Now that is some history!

    Your video brought back a lot of memories for me as my dad had one, I’m 70, and we used it so much we had to replace the burner at least three time and the pan quite a few more times. When my dad passed away I inherited it and used it till I passed it on to my son who is still using it. We used it for trout and the occasional salmon. We used a canvas tarp to protect it from the rain which my son also has. Thanks for the memories

    Stop rotation ! Heat dump never catches up . It takes an hour to heat up a Little Chief . It is a very kind unit even if it could take way less time for process

    @@KenRogersMostlyOutdoors Smoke your own cheese in Little Chief ( Matt method) Freeze a 3/4 full gallon bottle of water a day ahead. Plastic ok . Cut or buy 8oz to 1 lb chunks of cheese. Keep in fridge until it's time to load smoker. Load apple , alder or pecan wood chips in flavor pan . Let get going good 1/2 hour - 45 minutes Place frozen water bottle on lowest rack . Load cheeses on top racks. Close up and come back in hour or less . Have wax paper sheets to grab cheese from rack. Set out for hour to cool. Bag , place in fridge for at least 24 hours ( distribution of smoke into cheese can take up to 2 days) Pepper jack , Tillamook sharp & medium cheddar are amazing with sliced apples. Enjoy! I'm Oregonian . Luhr Jensen and Tillamook are staples here.

    Great video. I learned how to smoke fish when I was a kid with a little chief smoker and I have been a fanboy ever since. Fish is my all-time favorite for this smoker but jerky is also great. I did London broil jerky the other day on the Big Chief.

    great genuine video. Similar to Ray Lusk I've grown up here and have a couple of these. Thought i'd see what I could see on the subject before I make some jerky. Glad my deer roast is fully frozen so I can let it thaw for a day and slice thin with ease!

    bro i have used a lil cheif to make jerky .i use 3 pans of wood chip and cook time is around 6 to 8 hours.depending on outside temp and i use maple chips.

    I guess it's time to make me some beef jerky because that looks so good Ken 😋 Question, why a half pan of pecan next time? Was there too much smoke? Just curious.

    The meat is so thin that it doesn't take much to over smoke the meat. This batch wasn't too bad, but I think a little less would bad been better. Thanks!

    Get a good knife ,use soy sauce in your marinade and coat with black pepper before putting in smoker. Gotta use more chips and less opening the unit. Just set it and leave it go. I just bought a vintage unused little chief and I plan to make beef jerky my first project in it.

    Hey Ken, love the video. I'm thinking of buying this smoker. If the strips of meat are cut thinner, dry time would be cut in half?

    I’m going to say yes on that one. And… I’m learning to not rotate as often. I don’t think you need to in this smoker. Thanks for watching! I love this little smoker.

    Just picked up a little chief smoker. Does it not matter about the temp dropping from opening the door so frequently?

    Thanks for watching! Yes, it does matter. That video was shot not long after I got it myself. You don’t need to check it as often as I did in that video. Perhaps every few hours.

    Great Question! Some do, but I do NOT! If you soak them, you will get steam before smoke. I want smoke from the start. Great question… thank you!

    Semi freeze that meat then slice very thin will require less smoking time.
