    I was curious about why you put the brisket on the top cooking grate. Wouldn't the bottom cooking grate be cooler and less likely to require foil shielding on the point?

    I use the top grate because sometimes I put a water/vinegar pan underneath. The temp would of been around 250 on the bottom grate, but over time the same area would of probably needed a little tinfoil shield to keep from over burning.
