It's very good practice to try to keep your kayak going straight without the aid of a skeg or rudder. If someday it jams or breaks, you'll want to know how to control it without them.
In this video I also discuss some exercises for working on paddling in a straight line as well as turning and edging.

I saw this video a few years ago and thought it was pretty good. Just rewatched it (showed up in my KZread feed) and I would add that in addition to practicing with out your rudder/skeg, also practice with them and compare how the boat handles with and without them. You need to know that to understand the full capability of your boat so you develop a feel for the best way to paddle in any conditions.
Nice video! I'm still learning, but one thing that's helped me to be more aware of my paddling (when going straight) is to pick a landmark and head towards it using the bow of my kayak as a sight. You can see right away if your left or right stroke is stronger than the other and correct. Will have to practice your tip on doing s-turns by edging while paddling. Great exercise!
Excellent advice,i am there at moment with a 12' 6" kayak not the best tracker so i put a rudder kit on it but am using as much as i can without so i can be a better paddler.Also been practicing edging and works even on my shorter stout kayak.
