Do you have to season the pampano fish itself with salt and pepper?

You can season it beforehand to reduce the fishy smell but not necessarily :)

Sauté it with garlic onion n tomatoes n ginger first then put sabaw nang sinaing . The veggies eggplant okra sitaw n pechay

The broth definitely smells better when you sauté the spices first but this is optional. If I would do this differently, I'd rather roast the spices without added oil instead of sauteing :)
