moving is so rough and I'm impressed with how much you got organized in just one week. well done! for your new stainless pan I would suggest preheating without the oil and then just adding the oil right before you add your ingredients. that way you can test if the pan is hot enough and ready to cook by dripping a few drops of water. if the drops hiss and evaporate right away it's not hot enough, but if they bounce and roll around the pan first (the Leidenfrost Effect) it's ready to cook! people call it "the mercury ball test" ^^
