Singapore style noodles 🍜

Serves: 4
Prep time: 20 min
Cook time: 20 min
Ingredients
- 300g vermicelli rice noodles, soaked in boiling water for 5 mins
- 3 spring onions, sliced into 2cm pieces
- 1 carrot, cut into matchsticks
- 1/4 head wombok, sliced thin
- 4 cloves garlic, finely diced
- 300g cold roast pork (chicken or ham)
- 8 raw prawns (or shrimp), deveined and sliced in half
- 2 eggs, beaten
- 1 tsp curry powder
- 2 tbsp soy sauce
- 3 tbsp peanut oil
Method
Note - if you don't have a hot burner, remove the ingredients from the wok after each step and let it get back up to temp before moving on to the next step. Once you get to the step with the noodles, you can add everything back in and toss.
1. Heat the peanut oil in a wok or large frying pan over high heat.
2. Add the garlic and stir fry for 15 seconds.
3. Add the beaten egg and stir fry for another 30 seconds.
4. Add the sliced prawns and pork, and stir fry for another minute.
5. Add the spring onion, carrot, and wombok and stir fry for 2-3 minutes until the vegetables are slightly softened.
6. Add the drained noodles, curry powder and soy sauce, and stir fry until the noodles are heated through and coated in curry powder.
7. Serve hot and enjoy!

    @@quentindewiest5169 in terms of food, when people call others basic it usually means that that person’s taste is only used to the more traditional flavors of their culture and doesn’t like to explore foreign and exotic flavors. It also depends on the culture and country, in Australia this may well be basic, since being close to singapore might make this dish so common that people are already used to it. Meanwhile where I live, this is not a dish that is available anywhere, so it is definitely not basic for us.

    ​@@fanzhang5568 Missing the point a bit here. In the US, for example, if you just ask for "noodles", you'll probably get noodles with a bit of butter. I think in many places in Italy this would also be common. In Brazil, you'd likely have it with a bit of ground beef or hot dog with tomato... Which, don't get me wrong, are all delicious. But are nowhere near the Southeastern Asian noodle dishes - which are amazing and require a bit more cooking skills. The thing in the video is how Andy took a one-word request and picked out, of so many variations around the world for noodles,

    It's funny that names of places are attached to dishes that aren't even found in those places. A common noodle dish in Malaysia is called Mee Bandung. People in Bandung have never even heard of the dish. Then, there's USA fried rice. Can't fathom why it's called that. It's not even remotely American.

    星洲 or石叻波was the older names of Singapore before gaining independence. The olden days “Singapore noodles” ingredients are exactly how Andy prepared except there’s no roast pork and shrimp just purely eggs and cook with dark sauce as the olden days our forefathers do not have enough money to afford that luxury ingredients Andy prepared. It’s a commoner dish serve by then Cantonese people just like Bak Kut Teh & that’s why it was named 星洲米粉 or Andy’s translation Singapore noodles .
