Singapore Noodles: Curry Stir Fried Noodles with Chicken - Better Audio

Singapore Noodles: Dry Rice Noodles with Curry and Chicken!
Definitely one of our Favorite Stir Fry Noodle dishes!
Recipe:
Singapore Noodles
Sauce:
1 tablespoon Chinese cooking wine
1 teaspoon sesame oil
1 teaspoon of fish sauce
1 teaspoon soy sauce (you can use gluten free soy sauce if you want to make the dish gluten free)
1 teaspoon sugar (or honey)
Mix and set aside.
Ingredients:
8-10 ounces chicken, pork, or tofu, cut into slices and pat dry. (If you use shrimp, leave it whole)
¼ salt
Pinch of black Pepper
¼-1/2 onions, thinly sliced
½-1 cup carrots, julienned
½-1 red bell pepper, thinly sliced
1-2 cups snow peas (optional-boy choy, cabbage)
4 garlic cloves, roughly chopped
2-3 eggs, beaten
3-6 dried red chilis
1 tablespoon curry powder (madras curry)
½ teaspoon turmeric
½-1 teaspoon salt
4-5 ounces vermicelli rice noodles
Vegetable oil
Instructions:
Place dry noodles in large bowl. Pour boiling water onto noodles. Let stand for about 3-4 minutes (or until al-dente). Drain and remove as much water as you can. Cut noodles. Fluff with fork. Set aside.
In wok or large pan, heat 1-2 tablespoons oil and add ¼ teaspoon salt and cracked black pepper. When it’s hot, add chicken and stir-fry. Remove chicken and place on plate lined with paper towel.
In same pan, add onions and stir fry for about 2-3 minutes or until slightly wilted and fragrant. Add carrots, red pepper, snow peas and garlic. Stir fry for about 1-2 minutes or until just wilted. Make a well in the center and add oil. Pour beaten eggs and slightly scramble. Mix with the vegetables. Set aside.
Add 1-2 teaspoons oil to pan. Add cooked noodles and dried chilies. Stir fry for about 2-3 minutes. Add chicken and vegetables. Mix well. Add curry powder, turmeric, and salt. Stir fry until well incorporated. Add sauce and mix well. Adjust seasoning as you see fit.
Serve hot and enjoy!

    Also, when mixing and tossing the noodles with the vegetables, it's better to toss with copsticks instead of using the wooden spatulas.

    You should always add the onion after carrot and pepper or harder vegetables like that so the onion won't burn by the time the harder veggies cook. Garlic at the very end.

    Yes. I wash and rinse them and slice in half, lengthwise. The smaller ones I leave alone .

    You will need to follow the package directions. Each brand/type is different. We’ve made the mistake of assuming they are all similar and ended up with a soggy mess.

    Hi there! I soak the noodles in hot water and follow the instructions for the time, on the packages as each one is different. I like my noodles slightly chewy so I don’t leave them in too long. I hope you enjoy the dish! Please come back and let me know how it turns out!

    Hi! I can’t post pictures of the noodle package but I used Maifun thin rice noodles. However you can use any brand of rice noodles. I do find the thin noodles to be best. Good luck!

    Hi there! You can substitute Chinese cooking wine with sherry. For the fish sauce, there really isn’t a substitute. I would suggest you just not add it. Please come back and let me know how it comes out!

    Tip.....put the noodles into the pot of hot water. Then you don't have to worry about burning yourself pouring the water into the bowl. And 1 less thing to have to wash when done cooking.

    Please don't use a metal spatula on a Teflon coated non-stick pan. Metal can scratch or chip the coating and if that happens, you'll definitely need to replace the pan rather than continue using it. Instead, opt for a wooden spoon or silicone spatula.

    Funny I’ve watch 20 videos on making this dish and the type of oil used, no cooks ever say? I asked a very good Asian restaurant in my area and they said peanut oil . Trust me the wrong oil during frying changes the flavor. Also I pre scrambling the eggs.

    Thanks for your feedback! I’ll make sure to include the types of oil I use in my future videos. FYI, I sometimes use peanut oil for this dish. But if I don’t have it, I’ve found vegetable oil works for as well. I also pre scramble the eggs sometimes as well. Thank you for watching and happy eating!

    After boiling the water, why dump the water into the bowl? Why not just dump the noodles into the pot? Same result. Won't spill the boiling water.
